A peanut butter based brownie is delicious. The brownie is a preparation that combines perfectly with peanuts and any kind of nuts. Thinking of a brownie cookie, I particularly think of a dry cookie, because of the amount of flour that must be added so that the cookie doesn't become a mess in the oven, but if I think of a brownie, the cookie should be soft. Although there are many, many brownie cookie recipes, I was not happy with the results.

Some time ago, I shared a recipe for cookies filled with chocolate cake, with those cookies I loved the result, crunchy on the outside and the soft and fluffy chocolate cake filling inside. Thinking about that recipe, I wanted to make an adaptation, I changed the filling to be more fatty and thus achieve a filling that does not contain and make the cookie crackle, giving way to that brownie filling.

To make these cookies you need to prepare two mixes, a vanilla mix and a brownie mix. Each will have a different texture, but will play an important role in this recipe. The vanilla will try to contain the chocolate mixture, but it will be a difficult task, but at the same time it will give the crunchy element.

I love it when you combine ingredients and the result is what you want. The only bad thing about this recipe is that I made very few and they ran out too fast, but I already have an excuse to make them again. This recipe can still be modified to obtain different variations of flavors and textures, but we'll leave that for the next level. - For the brownie mix, melt the butter together with the peanut butter. Once melted, integrate both butters well.

- Add the cocoa powder to the butter and mix until a fairly thick chocolate paste is formed. The butter should be quite warm, to help the cocoa powder dissolve well.

- In a bowl, add the sugar together with the egg and beat with a balloon whisk or an electric mixer. The mixture should turn white and double in volume.

- Add the wheat flour and mix gently until the flour is well integrated into the chocolate mixture.

Store the two mixtures in the freezer for 30 minutes. Both mixtures should be hard. The vanilla mixture may harden faster, give the chocolate mixture enough time to harden so you can handle it with your hands.

Divide each mixture into equal portions. The chocolate mixture has a larger quantity than the vanilla mixture, this is normal. In my case I made 14 cookies, so I made 14 balls of vanilla dough and 14 balls of chocolate dough. The chocolate balls will be bigger than the vanilla ones, this is normal. You can make more or less cookies, it will depend on the portions in which you divide each dough.

> Guardar las dos mezclas en el congelador por el espacio de 30min. Ambas mezclas deben estar duras. Puede que la mezcla de vainilla se ponga dura mas rápido, dale el tiempo suficiente a la mezcla de chocolate para que se ponga dura y la puedas manipular con tus manos.

> Divide cada mezcla en porciones iguales. La mezcla de chocolate tiene mayor cantidad que la de vainilla, esto es normal. En mi caso preparé 14 galletas, así que hice 14 bolitas de masa de vainilla y 14 bolitas de masa de chocolate. Las bolitas de chocolate quedaran más grandes que las de vainilla, esto es normal. Puedes hacer mas o menos galletas, dependerá de las porciones en que dividas cada masa.

- Take a ball of vanilla dough and flatten it in your hand, take a ball of chocolate and place it in the vanilla dough and cover it completely. Repeat the process with all the dough.

- Place each cookie on a baking sheet and flatten them a little, don't worry too much about them being round, when baking, all the cookies will open up.

- Bake the cookies in the oven for 15-20 minutes with the oven preheated to 380°F until they are lightly browned on the surface. Let them cool completely and enjoy them as you like.

The cookies are ready, their crunchy texture on the surface, the softness of the brownie and the flavor of the peanut butter, make these cookies one of my favorites. They are perfect with a glass of milk or a cup of tea. You can also add white chocolate chips to the brownie mixture for an extra touch of moistness and flavor.
