El strudel de manzana era uno de los postres favoritos de mi madre, aunque a ella le encantaba todo lo que tuviera manzana, tenía cierta preferencia por los postres que tuvieran esa fruta. Cuando me entero que en clases íbamos a preparar el strudel, me contente bastante porque en todo este tiempo compartiendo recetas, nunca había preparado el strudel, eso era algo que siempre hacia mamá en casa, pero luego de esta clase, tengo que compartirles la receta del strudel de manzana y una versión que hizo mi madre llamado "cielo", que nunca anoto la receta del relleno, pero conversando con mis hermanos y sus recuerdos del sabor, me voy a atrever a intentar.

Mis días de clases son mis días favoritos de la semana, para mi es significa desconectarme de todo, incluso silencio todas las notificaciones de mi teléfono y me concentro a disfrutar de cocinar y más cuando son recetas que tienen un toque especial en mi vida. Aunque famosamente el strudel se conoce con manzanas, en clase se preparó una versión de frutas. El relleno estaba compuesto por manzanas verdes, ciruelas, melocotones, uvas pasas y almendras. Estas frutas combinan muy bien juntas y más cuando tienen ese toque de canela que le va perfecto.

Para mi strudel, yo solo utilice manzanas verdes, utilicé azúcar morena para tener ese sabor extra de la caña de azúcar y le coloque su canela y un toque de nuez moscada. Me encanta el sabor de la manzana verde así azucarada, con ese toque de nuez moscada, es un sabor que me lleva a momentos bonitos en mi vida y que luego les comparto porqué, ya que va asociada a una receta que nunca he compartido, porque mamá siempre era la que la hacía.

El strudel se hace con una masa que se estira tanto, pero tanto, que es medio transparente y es una de las claves de este postre. Una vez estirada la masa, se le coloca una fina capa de harina de almendras, esto hace que al enrollar no se pegue y crea el efecto de capas, tal cual como si fuera hojaldre. Sin embargo y como siempre me gusta probar cosas diferentes, yo en vez de utilizar harina de almendras, utilice almendras tostadas que luego triture y las coloque así. Esto hizo que se le lograra el mismo efecto y estuviera presente el sabor de la almendra tostada.

> The strudel is made with a dough that stretches so much, but so much, that it is half transparent and is one of the keys to this dessert. Once the dough is stretched, a thin layer of almond flour is placed on it, this prevents it from sticking when rolling and creates the effect of layers, just as if it were puff pastry. However, and as I always like to try different things, instead of using almond flour, I used toasted almonds that I then crushed and placed them like this. This gave the same effect and the toasted almond flavor was present.

El relleno se coloca solo en un solo lado de la masa y luego se comienza a enrollar. Si ha logrado tener una masa bien delgada, dar suficientes vueltas a al relleno, hace que se logren esas capas. Cuando se hornea, todo lo que se va creando en el centro, es magia pura. Las manzanas suaves, el dulzor ideal, el aroma de las almendras, en fin, es un postre crocante por fuera, pero con una suavidad y humedad por dentro que lo vuelven perfecto para comer a cualquier hora del día.

> The filling is placed on only one side of the dough and then you start rolling it out. If you have managed to have a very thin dough, giving enough turns to the filling, makes those layers. When baked, everything you create in the center is pure magic. The soft apples, the ideal sweetness, the aroma of the almonds, in short, it is a crunchy dessert on the outside, but with a softness and moistness on the inside that makes it perfect to eat at any time of the day.

Mis compañeras de estudio me encantan, hacen también que la clase sea divertida y si les contara las ocurrencias que tienen cuando es el momento de tomar las fotos. Es bonito poder tener días a la semana que te permitan vivir tu propia aventura, a tu manera, con las cosas que más te gustan y sin preocupaciones, y es algo que siempre le digo a las personas, que encuentren eso que les gusta y le dediquen el tiempo que sea necesario, si eso les hace felices.

It's nice to be able to have days a week that allow you to live your own adventure, in your own way, with the things you like the most and without worries, and that's something I always tell people, to find what they like and dedicate the necessary time to it, if that makes them happy.
