Homemade letcho, a delicious vegan dish made of boiled peppers, tomatoes and and zucchini / Leczo, pyszna wegańska potrawa z gotowanej papryki, pomidorów i cukinii

I liked letcho so much that I often cook this dish recently. I sometimes modify the list of ingredients. Recently, I have been doing a letcho with tomatoes, peppers and mushrooms, and today I have made a letcho in the classic version, i.e. with zucchini, tomatoes and peppers.

*Tak mi zasmakowało leczo, że często ostatnio robię tą potrawę. Zdarza mi się modyfikować listę składników. Ostatnio robiłam leczo z pomidorami, papryką i pieczarkami, a dzisiaj zrobiłam leczo w klasycznej wersji, czyli z cukinią, pomidorami i papryką.*

**Ingredients for letcho:**

zucchini
tomatoes
peppers
onion
Bay leaf
pepper
Vegeta spice (salt and dried vegetables (carrots, parsnips, onion, celery, parsley)

Pour a little oil into the pan and heat the onion, cut into feathers. Then dice the zucchini, tomato and paprika and put paprika into the pot in the next step. Peppers are the hardest vegetables and take longer to soften. That's why peppers go to pan first ;)

*Wlewamy trochę oleju go garnka i podgrzewamy cebulkę pokrojoną w piórka. Następnie kroimy w kostkę cukinię, pomidora i paprykę.W kolejnym kroku wkładamy do garnka paprykę. Papryka jest najtwardszym warzywem i potrzebuje więcej czasu, żeby zmięknać. Dlatego idzie na pierwszy ogień ;)*

When the pepper is soft, I put tomatoes and zucchini in the pot, as well as bay leaf and other spices. After a while of cooking, the tomatoes release juices and the dish becomes softer and has a nice texture.

*Gdy papryka zrobi się miękka wkładam do garnka pomidory i cukinię, a także liść laurowy i pozostałe przyprawy. Pomidory po chwili gotowania puszczają soki i potrawa staje się coraz bardziej miękka, ma fajną konsystencję.*

This dish is made very quickly, it is fully vegan and filling. I like to eat letcho with bread, roll or baguette. You can soak the bread in a vegetable sauce and it tastes yummy. In hot weather, I usually eat light dishes and on such summer days, leczo is a great idea for dinner.

*Tę potrawę robi się bardzo szybko, jest w pełni wegańska i sycąca. Lubię jeść leczo z chlebem, bułką lub bagietką. Można moczyć pieczywo w warzywnym sosiku i cudownie smakuje. W upały zazwyczaj jem lekkie dania i w takie letnie dni leczo jest super pomysłem na obiad.*
