Today I made burgers with quinoa cutlets for the first time. I really like quinoa, it is very healthy and is considered a superfood. Its advantages include high fiber and protein content. In addition to gquinoa, the cutlets contained sun-dried tomatoes, mozzarella cheese, egg, onion, flour and spices. I will show you step by step how to make them. 

*Pierwszy raz zrobiłam dzisiaj burgery z kotletami z kaszą quinoa vel komosą ryżową. Bardzo lubię tę kaszę, jest bardzo zdrowa i zaliczana do superfoods. Jej zaletami są m.in. wysoka zawartość błonnika oraz białka. Oprócz kaszy kotlety zawierały suszone pomidory, ser mozzarella, cebulkę jajka, mąkę oraz przyprawy. Pokażę wam krok po kroku jak je zrobić.*

***Ingredients:***

rolls
bio quinoa
mozzarella 
dried tomatoes
flour
egg
onion
wild garlic
pepper
salt
lettuce
tomato
Coleslaw salad
oil

ser mozzarella
suszone pomidory
mąka
jajko

First, we cook the quinoa. For example 1/3 cup of quinoa and 2/3 cup of water, a little salt. The quinoa must be rinsed before cooking. Cook for about 15 minutes, until quinoa look like in the picture below. You can also add some vegetable broth to the water in which the quinoa is cooked. 

*Najpierw gotujemy kaszę quinoa. Np. 1/3 szklanki kaszy quinoa i 2/3 szklanki wody, trochę soli. Kaszę trzeba przepłukać przed gotowaniem. Gotujemy ok.15 minut, aż kasza będzie wyglądać tak jak na zdjęciu poniżej. Można też dodać trochę bulionu warzywnego do wody, w której gotuje się quinoa.*

Add a few tablespoons of flour to the cooked groats. You can add 2 tablespoons, then the rest of the ingredients, and then more or less - add a little flour when you find that the cutlet dough is too watery. 

*Do ugotowanej kaszy dosypujemy kilka łyżek mąki. Można dodać 2 łyżki, a następnie pozostałe składniki i następnie na wyczucie - dodać trochę mąki, gdy uznamy, że ciasto na kotlety jest zbyt wodniste.*

Then we add the egg.

After the egg, add sun-dried tomatoes and mozzarella cheese, cut into pieces. 

*Po jajku dodajemy jeszcze pokrojone na kawałki suszone pomidory i ser mozzarella.*

It still remains to season the cutlets. I used wild garlic and pepper, and a little salt. But if you like more intense flavors, you can also add cumin and even dried chili peppers. 

*Pozostaje jeszcze przyprawić kotlety. Ja użyłam czosnku niedźwiedziego i pieprzu, dałam też trochę soli. Ale jeśli lubicie bardziej intensywne smaki można też dodać kumin, a nawet suszoną ostrą paprykę chili.*

Then we mix all the ingredients. If necessary, we add more flour and we can fry the cutlets. 

*Następnie mieszamy wszystkie składniki. W razie potrzeby dodajemy więcej mąki i możemy smażyć kotlety.*

I had a round metal a form for burger cutlets. Unfortunately, I couldn't find it, so they didn't come out perfectly round. I put them with a spoon in a pan with hot oil. I fried the cutlets on both sides. They looked a bit spotted because of the mozzarella cheese 😉 

*Miałam gdzieś okrągłą metalową formę do kotletów na burgery. Niestety nie mogłam jej znaleźć, więc nie wyszły idealnie okrągłe. Nakładałam je łyżką na patelnię z rozgrzanym olejem. Smażyłam kotlety z obu stron. Wyglądały trochę jakby były łaciate ze względu na ser mozzarella 😉*

After frying, it is good to drain the fat from the cutlets on a kitchen paper towel. It is also worth warming up the rolls, e.g. by heating them for a while in a pan - with the addition of olive oil. 

*Po smażeniu dobrze jest odsączyć tłuszcz z kotletów na ręczniku papierowym. Warto też podgrzać bułki, np. podgrzewając je przez chwilę na patelni - z dodatkiem oliwy.*

When the cutlet and buns are ready, we can start making burgers. We will also fill them with vegetables and salad. 

*Gdy kotlet i bułki są gotowe możemy się zabrać za tworzenie burgerów. Wypełnimy je również warzywami i surówką.*

First, we put a lettuce leaf on top of the roll. The roll should be spread with your favorite sauce on the inside. 

*Najpierw na bułkę kładziemy liść sałaty. Bułkę warto posmarować od wewnątrz ulubionym sosem.*

Put the cutlets and some Coleslaw salad on top of the lettuce.

*Na sałatę kładziemy kotlety i trochę surówki Colesław.*

The next ingredient is a slice of tomato, and then we cover the burgers with the other half of the roll. 

*Następnym składnikiem jest plasterek pomidora, po czym przykrywamy burgery drugą połówką kajzerki.*

After the first bite, I knew that the cutlet came out tasty. Different than the one I buy in a vegetarian restaurant, interesting in taste, among others thanks to the addition of dried tomatoes and mozzarella, which melted nicely during frying. I liked the fresh roll from bakery much more than typical burger rolls. 

*Już po pierwszym gryzie wiedziałam, że kotlet wyszedł niezły. Inny niż ten, który kupuję w Krowarzywa, ciekawy w smaku m.in. dzięki dodaniu suszonych pomidorów i mozzarelli, która fajnie się rozpuściła podczas smażenia. Świeża kajzerka smakowała mi o wiele bardziej niż typowe burgerowe bułki.*

Thanks 😊 In the past, I could not imagine burgers without meat, but such vegetable cutlets with the addition of some groats and spices are very tasty.
