En mi caso mi mamá ya tiene 91 años y sigue mandando.......!JEJE!
Creo que disfruta cada vez que lo hace.

Salió de su España natal siendo joven y nunca más regresó.
Yo nací en esta tierra de gracia, compartiendo recetas de aquí y de allá.
Les cuento que a mi me gustan mis caraotas negras con papelón, cosa que a ella le parece un horror.
Pero coincidimos en que nos gustan las cachapas, arepas y nuestra querida hallaca. Antes las preparábamos juntas en Navidad. Ahora no porque dan mucho trabajo y si yo las hago ella siempre quiere participar en todo.....
De niña le dí mucho trabajo en lo que respecta a las comidas. Comía muy poco y siempre tenían que complementar la dieta con suplementos nutricionales y vitaminas. ¡JEJE! Le salí demasiado cara!!!
De todas formas ella siempre se esmeraba en hacerme cosas diferentes solo para mí. Menudo trabajo, inventar a cada rato comidas diferentes.....
Entre esos platos me recuerdo de los calamares rellenos en su tinta, papas rellenas con carne molida y salsa de tomate, pimientos rellenos de carne y acompañados de papas, su famosa tortilla española. Que para colmo tenía que estar completamente seca porque no me gustaba el huevo.
También hacía la paella valenciana, su caldo gallego,pulpo a la gallega y empanada gallega de pollo.
No tengo fotos de eso, solo recuerdos. Pero voy a darles algunas recetas aproximadas:
**Pimientos rellenos**
Ingredientes
1 pimiento rojo grande por persona
50 gramos de carne molida por pimiento
sal
pimienta negra
2 cucharadas de cebolla blanca picadita
aceite para cantidad necesaria
1 papa por persona
Preparación
Cortar la parte de arriba del pimiento. Lavarlo.
En una sartén añadir un poco de aceite. Sofreír la cebolla. Cuando este transparente incorporar la carne molida,sal y pimienta. Freír todo. Dejar enfriar.
Rellenar el pimiento con esta preparación. Llevar al horno hasta que el pimiento esté cocido.
Mientras pelar la papa y cocinarla en agua con sal. Escurrir al estar lista.
Con el jugo que soltaba el pimiento, luego de asarlo, me preparaba una especie de salsa que espesaba con fécula de maíz.
Es que de paso, no me gustaban las papas sin salsa.
-¿Qué les parece?-
Y mi mamá seguía mimándome..... Siempre que comía este platillo mi mamá me sentaba, frente al televisor, para ver alguno de los programas favoritos. De esa manera me comía todo lo que ponía en el plato casi sin darme cuenta. Siempre, al recordar este plato, me ubico en la famosa serie de televisión: viaje a las estrellas.
Bueno ahora voy con la segunda receta:
**pulpo a la gallega**
Ingredientes
1 pulpo mediano
aceite de oliva cantidad necesaria
sal
pimentón español dulce
pimentón español picante
Preparación
Lavar el pulpo. Después poner en una olla agua a hervir. Cuando este hirviendo añadir el pulpo con una papa. Al pulpo hay que "asustarlo" al meterlo a la olla, esto es:
Toma el pulpo por la cabeza e introduce los tentáculos en el agua por unos segundos, cuidando no quemarte los dedos, lo sacas, y repites este proceso por tres veces consecutivas.
Una vez "asustado" déjalo cocinando en la olla durante unos 30-40 minutos,aproximadamente. Generalmente cuando la papa está cocida el pulpo también lo está.
Una vez esté cocinado el pulpo, sácale del agua, déjalo reposar un rato y pícalo en trozos con un cuchillo.
Finalmente en un plato, o una tabla de madera que es como se presenta en España, pon el pulpo, agrega sal, pimentón y mucho aceite de oliva.
Mezcla bien todos los ingredientes, y disfruta......
Este sencillo plato era para mi una exquisitez. Ahí si no protestaba, me servía hasta dos veces. No tenían que estar detrás de mí para que comiera.
Además en ese momento mamá siempre hablaba de mis abuelos,me leía sus cartas, trataba de que yo estuviese conectada con ellos.... con los sabores de su tierra, con el campo y con ese amor lejano.....pero cercano a la vez. Ese amor que mamá me trasmitía por la familia era único, difícil de explicar,solo hay que sentirlo.......
Y mamá siempre complaciéndome........

**Stuffed peppers**
Ingredients
1 large red bell pepper per person
50 grams of ground beef per bell pepper
salt
black pepper
2 tablespoons of chopped white onion
oil for quantity needed
1 potato per person
Preparation
Cut off the top of the bell pepper. Wash it.
In a frying pan add a little oil. Fry the onion. When it is transparent add the ground meat, salt and pepper. Fry everything. Let it cool down.
Stuff the bell pepper with this preparation. Bake in the oven until the bell pepper is cooked.
Meanwhile peel the potato and cook it in salted water. Drain when ready.
With the juice released by the bell pepper, after roasting it, I used to prepare a kind of sauce that I thickened with corn starch.

And my mom kept spoiling me..... Whenever I ate this dish, my mom would always sit me down in front of the TV to watch some of my favorite shows. That way I would eat everything she put on the plate almost without realizing it. When I remember this dish, I always think of the famous TV series: Journey to the Stars.
Well now I'm going with the second recipe:
**Galician octopus**
Ingredients
1 medium octopus
olive oil quantity necessary
salt
sweet Spanish paprika
hot Spanish paprika
Preparation
Wash the octopus. Then put water in a pot to boil. When it is boiling add the octopus with a potato. The octopus must be "scared" when putting it into the pot, that is:
Take the octopus by the head and introduce the tentacles in the water for a few seconds, taking care not to burn your fingers, take it out, and repeat this process for three consecutive times.
Once "scared" let it cook in the pot for approximately 30-40 minutes. Generally when the potato is cooked the octopus is also cooked.
Once the octopus is cooked, take it out of the water, let it rest for a while and chop it into pieces with a knife.
Finally on a plate, or a wooden board, which is how it is presented in Spain, put the octopus, add salt, paprika and lots of olive oil.
Mix all the ingredients well, and enjoy.......
This simple dish was a delicacy for me. If I didn't protest, I was served twice. They didn't have to be behind me to get me to eat.
Also at that time mom always talked about my grandparents, she read me their letters, she tried to connect me with them.... with the flavors of their land, with the countryside and with that love that was far away..... but close at the same time. That love that mom transmitted to me for the family was unique, difficult to explain, you just have to feel it........
And mom always pleased me........
