# It's ON again!

Finally after a 2 week delay one of the most loved <b>and certainly the tastiest</b> challenge out there is back on and I am beyond excited!

<b>First things first, I'd like to take my time and thank our amazing host @woman-onthe-wing for this awesome opportunity and for having me as the guest judge of SCC #29, thank you so very much, Joanna! I can only imagine the amount of stress you've been under the past couple weeks trying to resolve the issues and keep the challenge going.
And of course a big THANK YOU goes to our sponsors @smooth and @sirwinchester who continue to reward the winners and motivate the new comers!

As many of you guys know, I recently immigrated to the US from Crimea, there were a lot of things that I had to learn about and get used to, one of them was <b>brunch</b>.
Where I'm from people don't do brunch,  so for me it was a completely different eating experience and a new way to hang out with friends. Whoever came up with the idea of brunch was a genius, I think it is a fun way to catch up with people while enjoying your breakfast in the middle of the day.

Most places over here in Detroit have brunch drinks specials, usually it is Bloody Mary's and Mimosas. Although I am not a big fan of Mimosas, I love me some Bloody Mary's with pickles and olives, a tiny stalk of celery, a few cubes of salami, a little bit of Swiss cheese, a couple slices of fresh jalapeno . . . the list is pretty long, but my point is that IT IS GOOD! Occasionally I cheat on my Bloody Mary with a beer though.
I do realize that not everyone drinks alcohol  and even though I encourage you guys to pair your meal with a drink it does not necessarily have to contain alcohol in it.

*I am not submitting my entry for the challenge this week, but I decided to cook something anyway. I always happen to have plenty of Mexican ingredients at hand, a Mexican grocery is within walking distance from my house and I learned to like quite a variety of Mexican dishes which of course living in Crimea I had no idea about, so it's a fun culinary journey for me.*

# <center>Mango salsa and fried eggs with RANDOM THINGS!</center>

*Ingredients for the Mango salsa:*

* 1 ripe mango;
* jalapeno pepper (half);
* red onion (quarter);
* fresh cilantro;
* lime (half);
* a pinch of salt.

*Directions:*

This is pretty straight forward - slice the flesh around the mango pit, dice the jalapeno, onion and cilantro, add your salt and squeeze the lime, stir it all a bit and set aside. It is ready to eat at this point, we're just not going to do that yet haha.

*Ingredients for the fried eggs:*

* 3 large eggs;
* 9 medium shell on or cooked shrimp;
* a clove of garlic;
* fresh cilantro;
* lime (half);
* jalapeno pepper (half);
* 1 thai chili;
* round tomato (half);
* poblano pepper (half);
* spring onion;
* salt and pepper to taste.

*Directions:*

The first thing I'm going to do is precook my shrimp. I have medium shell on shrimp so I'm going to boil them first and remove the shells and tails. When that's done, in a small bowl squeeze some lime, garlic and sliced thai chili, add shrimp and let it sort of marinate for a few minutes, while you're working on the rest of the ingredients.

Slice up the tomato, poblano and jalapeno peppers. Heat your skillet over a medium heat and fry the shrimp for a couple minutes, add in the vegetables. If you want you can turn them around before you crack the eggs in, I didn't. Place the eggs on the skillet and cover with a lid, let them fry for a few minutes keeping an eye on them so they don't burn, you will know when your food is cooked, I'm sure everyone knows how to fry eggs haha.

Now, move this colorful goodness onto your plate reserving some room for the mango salsa, that I will put on the side. All done! Now, let's eat!

These fried eggs and mango salsa compliment each other in so many ways, to be honest I didn't expect the burst of flavors myself. Sweet, sour, hot and so appealing to the eye paired with a refreshing Margarita, I cannot think of a better Sunday brunch!
