* Good evening Hivers, I hope you had a fantastic weekend... Today, I will share with you the exquisite lunch I prepared to enjoy with the family. I usually make this dish EVERY weekend, since there is a popular market near my house that sells fish and vegetables every Friday, the quality is excellent, the products are very fresh and at a good price. 

* Whenever I prepare this dish, I always add fresh corn cobs, the cooking process is longer, it takes about 1 hour to soften, but the result is really spectacular!

* Let's put on our aprons and prepare a healthy and nutritious **soup with mixed vegetables and macaroni**... Let's get started!

>* Buenas noches Hivers, espero que hayan pasado un fantástico fin de semana... Hoy, compartiré con ustedes el exquisito almuerzo que preparé para disfrutar en familia. Suelo realizar éste platillo TODOS los fines de semana, ya que cerca de mi casa hay un mercado popular que vende pescados y verduras todos los viernes, la calidad es excelente y los precios son solidarios.

> Siempre que preparo éste plato, agrego mazorcas frescas de maíz, el proceso de cocción es MÁS largo, tarda aproximadamente 1 hora en ablandarse, pero el resultado es realmente espectacular!

>* Pongámonos el delantal y preparemos una saludable y nutritiva **"sopa con verduras mixtas y macarrones"**... Empecemos!

* To make this recipe use the following ingredients: carrots, yucca, green beans, green plantain, corn cobs, ripe plantain, red bell bell pepper, sweet peppers, garlic cloves, coriander, mint, onion, scallion and macaroni (the photo is in the final step). 

>* Para realizar ésta receta utilice los siguientes ingredientes: zanahoria, yuca, judías verdes, plátano verde, mazorcas de maíz, plátano maduro, pimiento rojo, ajíes dulces, dientes de ajo, cilantro, yerbabuena, cebolla, cebollín y macarrones (la foto está en el paso final).

* We start cooking the jojoto cobs, add 3 liters of vegetable broth to a deep pot. Cook over high heat for about 1 hour or until they are tender. On this occasion I had good luck, since the cobs were VERY fresh and it was enough 40 minutes for them to take a soft and juicy texture.

>* Empezamos cocinando las mazorcas de jojoto, agregamos a una olla honda 3 litros de caldo de verduras. Cocinamos a fuego "alto", aproximadamente durante 1 hora o hasta comprobar que se ablandaron. En ésta ocasión tuve buena suerte, ya que las mazorcas estaban MUY frescas y fueron suficiente 40 minutos para que tomaran una textura "suave y jugosa".

* To enjoy a VERY "tasty and substantial" flavor: add: onion, scallion and bell pepper.

>* Para disfrutar de un sabor MUY "sabroso y sustancioso" agregamos: cebolla, cebollín y pimiento.

* Add the "yucca", this vegetable is the one that takes the LONGEST to soften. Cook until it acquires a "semi-soft" texture, it will take approximately 20 minutes to reach the right consistency.

>* Incorporamos la "yuca", ésta verdura es la que MÁS tarda en ablandarse. Cocinamos hasta que adquiera una textura "semi-blanda", tardará aproximadamente 20 minutos en tomar la consistencia adecuada.

* Friends, these "sweet peppers" that I bought must be the product of a special harvest, as they are VERY aromatic. They are usually "red or green", the predominant color in these peppers is "purple". If you see them in the supermarket do NOT hesitate to buy a sufficient quantity, you can keep them in airtight bags and reserve them in the freezer. 

* Add the garlic cloves and the sweet peppers (finely chopped).

>* Amigos, estos "ajíes dulces" que compré deben ser producto de una cosecha especial, ya que son MUY aromáticos. Ellos suelen ser "rojos o verdes", el color que predomina en éstos ajíes es el "morado". Si lo llegan a ver en el supermercado NO duden en comprar una suficiente cantidad, pueden guardarlos en bolsas herméticas y reservarlos en el congelador.

>* Añadimos los dientes de ajo y los ajíes dulces (finamente cortados).

* In this step, we integrate ALL the vegetables: plantains (green and ripe), carrots and green beans. I suggest reserving some of the "vegetable stock", as you may need MORE of it in the "final step"... I added 3 cups of broth.

* Add the "macaroni" and cook until ALL the ingredients are tender.  

>* En éste paso, integramos TODAS las verduras: plátanos (verdes y maduros), zanahorias y judías verdes. Les sugiero reservar una parte del "caldo de verduras", ya que pueden necesitar MÁS cantidad en el "paso final"... Añadí 3 tazas de caldo. 

>* Incorporamos los "macarrones", cocinamos hasta comprobar que TODOS los ingredientes se ablandaron.

* Next, we add 2 ingredients that can NOT be missing if you want to enjoy a VERY tasty dish... We add our aromatic "coriander and mint" leaves. Mix and turn off.

* Our succulent **"soup with mixed vegetables and macaroni"** is ready to serve and enjoy!

>* A continuación, colocamos 2 ingredientes que NO pueden faltar si desean degustar un platillo MUY sabroso... Añadimos nuestras aromáticas hojas de "cilantro y yerbabuena". Mezclamos y apagamos. 

>* Nuestra suculenta **"sopa con verduras mixtas y macarrones"** estará lista para emplatar y disfrutar!

Looks very appetizing, looks like a lot of work but worth it. The colors are so vibrant. Never tried whole corn cobs in anything before, but this sure makes me want to try them now. Thanks for sharing this recipe.
