(ESP-ING) Ceviche de mango (receta con fotos) / Mango ceviche (recipe with photos)
Buenas tardes amigos de Hive, espero que hayan pasado un excelente fin de semana... En ésta oportunidad les voy a compartir una receta super fresca, nutritiva y deliciosa. 

El ingrediente estrella de éste platillo, es una fruta que se destaca por su versatilidad, se puede comer verde o madura, podemos utilizarla en recetas dulces o saladas,  al cocinarlas conseguimos maravillosas jaleas y mermeladas. 

En Venezuela, se aprovecha al máximo su cosecha, y con mucha creatividad... se preparan exóticas versiones de: picantes, salsas y encurtidos (están muy sabrosas! :D)

Hoy, aprovecharé las propiedades y beneficios  del **"mango"**, para elaborar un suculento **"ceviche de mango"**. 

Pongámonos el delantal y con la emoción que conlleva cocinar, disfrutemos de éste magnífico proceso...

>Today, I will take advantage of the properties and benefits of the mango, to make a succulent **"mango ceviche"**.

**Necesitarán los siguientes ingredientes:**

* 3 mangos grandes  (1 verde y 2 semi-maduros)
* 3 cucharadas de aceite de oliva "extra virgen"
* 6 cebollines 
* 2 ajíes dulces (rojo y verde)
* cilantro (8 ramitas)
* 1 cucharadita de pimienta
* una pizca de sal

>* You will need the following ingredients:

>* 3 large mangos (1 green and 2 semi-mature)
>* 3 tablespoons of "extra virgin" olive oil
>* 6 green onion
>* 2 sweet peppers (red and green)
>* coriander (8 sprigs)
>* 1 teaspoon of pepper
>* a pinch of salt

* El primer paso será: Poner en un envase hondo los 6 cebollines y los ajíes dulces picados lo más pequeñito posible. Le añadimos el jugo del limón y una pizca de sal, mezclamos bien y dejamos macerar durante 30 minutos, para que  los ingredientes se impregnen con la deliciosa acidez del limón. Para ésta preparación me encanta cortar el cebollín en ruedas, para disfrutar su sabor particular.

>* The first step will be: Put in a deep container the 6 chives and the sweet peppers chopped as small as possible. Add the lemon juice and a pinch of salt, mix well and leave to macerate for 30 minutes, so that the ingredients are impregnated with the delicious acidity of the lemon. For this preparation I love to cut the chives in wheels, to enjoy their particular taste.

* A continuación, lavaremos bien nuestros jugosos y apetitosos mangos, procedemos a quitarles la piel. Antes de cortar su pulpa en cubos, lo lavaremos otra vez, éste procedimiento es para evitar que su pulpa adquiera el sabor amargoso de su piel.

>* We then wash our juicy and tasty mangoes well, and proceed to remove the skin. Before cutting their pulp into cubes, we will wash them again, this procedure is to prevent their pulp from acquiring the bitter taste of their skin.

* Cortamos su pulpa en cubos pequeños y reservamos para incorporar en el paso final.

* Añadimos las 4 cucharadas de nuestro dorado y aromático aceite de oliva "extra virgen"...

* Incorporamos el cilantro (finamente picado), éste ingrediente potenciará el sabor a nuestra deliciosa receta. 

>* We incorporate the coriander (finely chopped), this ingredient will enhance the flavor of our delicious recipe.

* Ya casi en la recta final... Añadimos la cucharadita de pimienta en polvo (mezclamos bien).

Ésta receta tiene un delicioso contraste entre lo dulce del mango y lo delicado del aderezo, lo he probado con cebolla morada, pero no me convence :( jeje al incorporar el cebollin, la transformación fue maravillosa.
