Rice milk: a healthy alternative - Leche de arroz: una alternativa saludable

It is not a secret that there are pros and cons of drinking cow's milk, it is high in fat, coming from animal origins also involves the intake of hormones and fats. The food industry is affecting the planet due to the emissions of gases that are the main cause of global warming.. So for the lactose intolerant, vegans, people allergic to gluten and anyone who wants to reduce the consumption of animal products, here I offer a healthy, cheap and very easy to do alternative: Rice milk.

For this simple recipe you will need the help of a blender or food processor.

Ingredients:

1 cup of rice
2 cups of water

Preparation:

We are going to put the rice in a bowl with water to clean it. We mix it with a spoon.

Now we proceed to decant the water from the bowl.

We put a pot with two cups of water in the kitchen and add the rice that we have washed.

Cook the rice at medium heat for approximately 15-20 minutes or until cooked, as shown in the photo below:

Let it cool down for a few minutes. Then we proceed to blend the rice that we have cooked adding 4 cups of drinking water. If you want, you can add a teaspoon of vanilla essence or cinnamon powder.

Once blended, strain the mixture to separate the liquid part from the lumps.

If you wish, you can keep the leftovers to give it another use in a recipe of your choice. In my case I would use it for some rice cookies for example.

Personally, I find this milk ideal for smoothies with fruit or oatmeal. It is an excellent substitute for cow’s milk and its sweet taste and body serve to use it in many recipes where the use of milk is required.

No es un secreto que hay pros y contras de beber leche de vaca, es alta en grasa, el origen animal conlleva la ingesta también de hormonas y grasas, y la industria alimentaria está afectando el planeta por las emisiones de gases que contribuyen al calentamiento global.. Así que para los intolerantes a la lactosa, los veganos, las personas alérgicas al gluten y todo aquel que quiera reducir el consumo de productos de origen animal, aquí ofrezco una alternativa saludable, económica y muy fácil de hacer: Leche de arroz.

Para esta sencilla receta necesitarás la ayuda de una licuadora o procesador de alimentos.

Ingredientes:

1 Taza de arroz
2 Tazas de agua

Preparación:

Vamos a colocar el arroz en un envase con agua para limpiarlo. Lo removemos con una cuchara.

Ahora procedemos a decantar el agua del envase.

Colocamos en la cocina una olla con dos tazas de agua y agregamos el arroz que hemos lavado.

Cocinamos el arroz a fuego medio por aproximadamente 15-20 minutos o hasta que se cocine, como se muestra en la foto de abajo:

Dejar enfriar por unos minutos. Procedemos  entonces a licuar el arroz que hemos cocinado agregando 4 tazas de agua potable. Si deseas, puedes agregar una cucharadita de esencia de vainilla o canela en polvo al gusto.

Una vez licuado, colamos la mezcla para separar la parte líquida y no hayan grumos.

Si deseas puedes conservar lo que ha quedado en el colador para darle otro uso en alguna receta de tu preferencia. En mi caso la usaría para unas galletas de arroz.

Así se ve nuestra leche de arroz una vez embotellada.

Personalmente, encuentro esta leche ideal para realizar licuados con frutas o con avena. Es un excelente sustituto a la leche vacuna y su dulce sabor y cuerpo nos servirán para usarla en muchas recetas donde requiera el uso de leche.
