Hellooooo, hellooooo! Greetings to all. This is my first post in this community dedicated to vegan gastronomy. The recipe that I present to you below is very simple and with only 3 ingredients. Taking advantage of some passion fruit plants that my dear neighbor and I think I have enjoyed their fruits more than him. Almost the entire plant has become entangled in the cyclone from my house and has climbed up to the building, entangling a large part of it in the columns of the factory. I am very happy because we have enjoyed it a lot. We have highlighted juices, cakes, ice cream and now this passion fruit jam, which is the first time I have made it. For a long time I have had the concern or curiosity to make recipes with the passion fruit shell, but the truth had not caught my attention until my daughter arrived very happy from her mother-in-law's house with some passion fruit ice cream that prepared in this way. So then it occurred to me to start preparing this jam and the truth is that the result has surprised me. ¡Holaaaaa, holaaaaaa! Saludos a todos. Esta es mi primera publicación en esta comunidad dedicada a la gastronomía vegana. La receta que les presento a continuación es muy sencilla y con sólo 3 ingredientes. Aprovechando unas plantas de parchita que mi querido vecino y creo que he disfrutado de sus frutos más que él. Casi toda la planta se ha enredado en el ciclón  de mi casa y ha subido hasta la construcción enredándose gran parte de ella en las columnas de la fábrica. Yo estoy muy contenta porque hemos disfrutado mucho de ella. Hemos realzado jugos, tortas, helados y ahora esta mermelada de parchita que es la primera vez que la elaboro.

Desde hace mucho tiempo he tenido la inquietud o la curiosidad de hacer recetas con la concha de la parchita, pero la verdad no me había llamado mucho la atención hasta que mi hija llegó muy contenta de la casa de su suegra con unos helados de parchita que preparó de este modo. Así que entonces se me ocurrió comenzar preparando esta mermelada y la verdad que me ha sorprendido el resultado.

Esta preparación, con las conchas de la parchita, permite obtener una consistencia espesa, ideal para preparar esta mermelada ya que al ser mezclada con el azúcar se obtiene un sirope o jarabe espeso ideal para untar. Así que sin más, comencemos a la preparación.

Cut the passion fruit in half and extract the pulp. Place the shells in a saucepan with water and cook for 1 1/2 hours or until we can easily pierce them with a fork.

Once the shell is cooked, let it cool and with a spoon or knife separate the crust from the white part.

We take the blender and process with a little water that was left over from cooking.

Cortamos las parchitas a la mitad y extraemos la pulpa. En una cacerola con agua colocamos las conchas y cocinamos por 1 1/2 hora o hasta que con un tenedor podamos perforar fácilmente. 

Una vez cocida la concha dejamos enfriar y con una cuchara o cuchillo separamos la corteza de la parte blanca.

Llevamos al la licuadora y procesamos con un poco de agua que quedó de la cocción.

Let cool and pack. To preserve this jam I suggest placing them in previously sterilized glass containers. This jam is ideal for filling desserts since it has a very good consistency, to spread on cookies, breads, to add to yogurt, and any other use that you can think of. I am very pleased with the result and it will be one of my favorite jams after the guava one. My neighbor was also delighted and despite the fact that he is a man who has worked in the food business, he had never tried this jam.

Dejamos enfriar y envasamos. Para conservar esta mermelada les sugiero colocarlas en envases de vidrio previamente esterilizados. Esta mermelada es ideal para rellenar postres ya que tiene muy buena consistencia, para untar con galletas, panes, para agregar al yogur, y cualquier otro uso que se te pueda ocurrir. Yo estoy muy complacida con el resultado y será una de mis mermeladas favoritas después de la de guayaba. Mi vecino también quedó encantado y a pesar de que es un señor que ha trabajado en el negocio de comida nunca había probado esta mermelada.

Yo!!! Soy amante de la parchita. Ya había probado el jugo que se hace también usando la concha, pero mermeladas no. Debe hacer muy buena combinación con las galletas o galletones. Gracias por compartirnos tu receta.

No sólo se ve, te puedo asegurar que sabe riquísima, Me sorprendió muchísimo su suavidad y textura, creo que la única mejora que haría sería agregar un poco de jugo de limón para darle más acidez, del resto, simplemente deliciosa. Espero la pruebes. Gracias por comentar. Saludos.
