Knead and slap the mixture until it becomes sticky and cohesive. 2- **Marinade:** - In a bowl, create a marinade by mixing the grated tomato, minced white onion, salt, pepper, and ground coriander. 3- **Layering:** - On a flat work surface, lay out a sheet of plastic wrap. Start by layering the beef slices, generously brush with marinade, and salt the lamb fat sheets. - Add a layer of the prepared ground beef mixture. - Layer with sliced mushrooms, red onion, herbs, and finally, additional lamb fat. 4- **Chilling:** - Wrap the layered "cake" tightly in plastic wrap and place it in the freezer for several hours until firm, about 2 hours. 5- **Skewer Preparation:** - Once firm, slice the "cake" into rectangles about 5 cm by 2.5 cm. - Skewer each piece carefully through the narrow edge. 6- **Grilling:** - Grill the skewered kebabs over hot coals, turning frequently, until golden and cooked through, approximately 12 minutes.
