How to make simple crispy spring rolls with mung bean sprouts.

Finding fresh and beautiful mung beans sprouts is very hard to catch in our market. Thankfully I was able to do some purchases for our needs at early as 7 am. While roaming around to decide which vegetable I need to buy I see these mung bean sprouts which is placed inside a plastic and to my surprise they look beautiful and fresh.

I love mung bean sprouts so much that it made me decide to buy 500 grams even they are a little expensive. I planned to saute it but then I realised what if I turn it into spring rolls for change.

And so I bought wrapper and just a single carrot for the ingredients and also bought spices for our daily needs.

*What I love about buying mung bean sprouts is that I want them without too many leaves because they might taste bitter and also I don't want to cook right away with these roots.*

Here's how I prepare it before cooking. It may take you a hard time while doing this and also it consumes time so whenever I can find that rootless mung beans it's a bunos for me.

After removing those unwanted roots. I start cooking them.

*The first step I made was to saute the onion, garlic and carrots in oil for 1 minute followed by the mung bean sprouts season with salt, black pepper and my favourite seasoning and cook for another 1 minute. (Note not to overcook or else the crunchiness will be lessened) Meanwhile, I drain the excess oil and cool down the beans before wrapping.*

**Wrapping Time**

*First, I fill in 1 tablespoon of the cooked ingredients. Roll the wrapper that is shown above and sealed with water to lock the fillings inside.*

**Deep-fry after**

Here's my finished vegetable dish. Simple yet delicious crispy rolls packed with healthy nutrients and antioxidants.
