Muchas veces terminamos desarrollando habilidades al pasar de los años, las cuales son casi parte de nosotros, en mi caso me he dedicado en muchas oportunidades a hacer galletas, tanto que llegué al nivel de hacerlas de muchas maneras sin importar la ocasión, las razones son claras, me gusta el dulce y es algo que puedo hacer muy rápido. Acá les mostraré algunas de las que he podido hacer.

Siempre se tratará que las galletas queden de buena forma, lo más redonda posible que es algo característico en ellas, además en mi caso, me gusta que queden crujientes, por lo que he recurrido a usar azúcar morena para darle esa textura y que queden así, la masa no siempre tiene que quedar súper seca, de lo contrario quedará muy redonda y la cantidad que queramos hacer siempre será a base de lo que hayamos logrado hacer de mezcla. Estas son de las mejores que he podido hacer con un solo toque de vainilla, espero la disfruten.

A muchos nos gusta el chocolate, es el mejor dulce que pueda existir, cuando se combina con algo así de bueno como lo son las galletas, se tiene lo mejor de ambos mundos. Cuando hice estas galletas, que también quedaron súper buenas, no buscaba que quedaran crujientes, al contrario, deben ser suaves en su textura, lo suficiente para partir una en dos pedazos y pueda verse un poco de ese concentrado de chocolate que tiene por dentro, así como está de muestra en la foto. El chocolate que suelo usar es el cacao en polvo, con 40 gramos de un buen cacao siempre bastará para hacer al menos unas 40 galletas, donde busco hacerlas más pequeñas para altas cantidades en una bandeja.

No solo la vainilla y el cacao son protagonistas para hacer unas buenas galletas, también se puede hacer con un poco de avena, al menos unos 50 gramos para que queden a buen toque en su textura. Son de las primeras galletas que aprendí a hacer hace muchos años atrás y aún las hago de vez en cuando, aunque soy más fanático de las galletas de chocolate. En este caso la harina juega un papel muy importante, ya que se trata de avena y es un insumo seco que le dará más espesor a la mezcla, así que debemos mantener un buen equilibrio entre ambas.

Cuando se trata de hacer altas cantidades de galletas, el polvo de hornear y el bicarbonato nos pueden ser muy útiles, sin agregar mucho, realmente saldrán bastantes, y quedarán muy bien de tamaño, tratando de abastecer la ocasión en este momento. Recuerdo que salieron al rededor de unas 97 galletas y pues, la forma no quedó lo más redonda posible porque llegaron a pegarse algunas al momento de esparramarse en el horno. Más allá de eso, los objetivos fueron cumplidos e incluso sobraron unas siete que luego me pude comer, tranquilamente.

No solo se hacen buenas galletas acá, también con ese aprendizaje busqué combinarlas con un brownie, lo cual queda de esta manera, un cookie brownie bastante sencillo de hacer y que de verdad, llega a ser demasiado bueno. No resultó tan laborioso al darme cuenta que solo es hacer la mezcla del brownie aparte de la galleta y que luego, antes de meterla al horno, se colocan los trozos de galletas por todos lados, claro está, no se mucha galleta en esta ocasión porque ya había salido una bandeja entera de galletas y esto más bien era lo que me sobró en ese momento.

Manteniendo los principios básicos de un brownie y que su centro quede húmedo, logré que saliera al gusto, sin embargo, no fue mucha la mezcla que había logrado y quedó así de pequeño. Lamentablemente no duró mucho como para seguir apreciando semejante majestuosidad, pero sin duda es algo que haría muchas veces.
