POTATO PANCAKES

Discovered I like potato pancakes ...

Easy to make once you grate the potatoes and one onion. The onion can be a living hell to grate when it makes your eyes run rivers. 

5 simple ingredients 
                       2 medium potatoes 
                       one sm/med onion
                       teaspoon of salt
                       one egg
                       olive oil for the pan

After you mix all the ingredients in a large bowl, put them in a thin cloth and drain most of the liquid. Oil the skillet. Place the mix in and flatten with spoon to about 1/2 an inch. Heat the pan before you put them in with a medium heat.   

When you see brown along the edges flip and cook at least 5 more minutes. Very tasty 😊
