Brazilian food with a Venezuelan taste / Black Beans - Caraotas Negras - Feijoada [ESP/ENG]

¡¡Hola comunidad de Foodies on Hive!! 

El día de hoy quiero compartir con ustedes una receta que forma parte del día a día tanto para los venezolanos como para los brasileros. 

Así es, aunque estos dos países tienen culturas diferentes, hay puntos en común. Las caraotas negras, son llamadas en Brasil como Feijão Preto, y el plato que se prepara se llama Feijoada, que es una combinación de frijoles negros con abundante carne de cerdo conservada en sal.  

En Venezuela también tenemos este plato, llamado Caraotas negras, y aunque no es muy común agregarle carne de cerdo, si hay quienes lo preparan así y saben que esa combinación es muy sabrosa. 

Así que para mí fue realmente fácil hacer mi versión de Caraotas negras al estilo brasilero, o al revés seria feijoada brasilera al estilo venezolano, puede ser de ambas formas pues tiene un poquito de cada país. Lo que importa es que es un plato muy sabroso, nutritivo, económico y fácil de preparar. 

### Ingredientes:  

½ Kilo de Caraotas negras o Feijão Preto 
1 cebolla 
1 pimentón 
Ají dulce 
4 dietes de Ajo 
Cilantro  
1 calabresa (Embutido parecido al Salami o salchichón) 
Carne de Sertão o charque (Carne seca) 
Beicon o Tocineta 
Aceite, cantidad necesaria. 
Condimentos variados como orégano seco, sal, comino en polvo, pimienta negra molida.

### Preparación: 

- Poner en remojo por al menos una hora los frijoles o caraotas negras. 
- Poner a desalar la carne seca, cocinando en agua por media hora, incluso cambiando el agua varias veces, para retirar la sal. 
- Luego que las caraotas o frijoles estén remojados se les retira el agua, y los colocamos en una olla de presión junto con la carne, la calabresa y el beicon o tocineta. Colocar agua hasta que cubra los ingredientes y dejar cocinando en la olla de presión contando media hora desde que la olla empieza a sonar o hacer presión.

- Picar todos los Aliños o vegetales que le darán la sazón a las caraotas, y los sofreímos en un sartén con suficiente aceite, allí le agregamos también los condimentos como la sal, el comino, la pimienta.  
- Después que esté listo el sofrito se lo agregamos a las caraotas, removemos y dejamos cocinar por unos minutos más, asegurándonos que estén ya blanditas, o suaves.

Y así quedan estas caraotas al estilo feijoada brasilera. Les aclaro que esta receta es bien a mi estilo venezolano, pues no puede decirse que es una auténtica feijoada brasilera ya que esta lleva más ingredientes y la sazón brasilera es difícil para mí de igualar, pues lleva también ingredientes picantes, que, aunque me gusta en cierta medida, no me atrevo a agregarlos. Mas bien siempre intento hacer una media entre lo nuevo que son los ingredientes de la comida brasilera, y lo que es parte de mi forma de cocinar con sazón venezolana.

Today I want to share with you a recipe that is part of everyday life for both Venezuelans and Brazilians. 

That's right, although these two countries have different cultures, there are points in common. In Brazil, black beans are called Feijão Preto, and the dish that is prepared is called Feijoada, which is a combination of black beans with abundant pork meat preserved in salt.  

In Venezuela we also have this dish, called black beans, and although it is not very common to add pork, there are those who prepare it this way and know that this combination is very tasty. 

So for me it was really easy to make my version of black beans Brazilian style, or the other way around it would be Brazilian feijoada Venezuelan style, it can be both ways because it has a little bit of each country. What matters is that it is a very tasty, nutritious, economical and easy to prepare dish. 

### Ingredients:  

½ Kg of black beans or Feijão Preto 
1 onion 
1 paprika 
Sweet chili 
4 cloves of garlic 
Cilantro  
1 calabresa (Sausage similar to salami or sausage) 
Carne de Sertão or charque (dried meat) 
Bacon or bacon 
Oil, quantity needed. 
Assorted seasonings such as dried oregano, salt, cumin powder, ground black pepper. 

 

### Preparation: 

- Soak the beans or black beans for at least one hour. 
- Desalt the dried meat, cooking it in water for half an hour, even changing the water several times, to remove the salt. 
- After the beans are soaked, remove the water and place them in a pressure cooker together with the meat, the calabrese and the bacon. Put water until it covers the ingredients and let them cook in the pressure cooker for half an hour from the moment the pot starts to beep or pressurize. 
- Chop all the Aliños or vegetables that will give the seasoning to the beans, and fry them in a pan with enough oil, then add the seasonings such as salt, cumin and pepper.  
- After the sofrito is ready, add it to the beans, stir and let them cook for a few more minutes, making sure they are soft.

And this is how these Brazilian feijoada style beans turn out. I should clarify that this recipe is very much my venezuelan style, because it cannot be called an authentic feijoada, since it has more ingredients and the Brazilian seasoning is difficult for me to match, since it also has spicy ingredients, which, although I like to a certain extent, I don't dare to add them. Rather, I always try to make a balance between the new ingredients of Brazilian food, and what is part of my way of cooking with Venezuelan seasoning.
