Feliz día mis amigos,  espero que se encuentren bien y estén pasando un excelente fin de semana,  hoy me uno a este gran concurso que nos propone el equipo de @plantpoweronhive,  es todo un reto y por eso me gusta jajaj, nos piden tener un día completo vegano, les confieso que no lo he hecho antes,  así que vamos a ver como me va.</div>

Un desayuno lleno de energía y vitaminas,  una deliciosa avena cocida con leche de coco,  les confieso que es primera vez que  hago la avena con leche vegetal, y la verdad es una delicia, con frutos secos, y un poco de canela.

Ingredientes/Ingredients:

- 1 taza de avena en hojuelas.
>1 cup of oatmeal in flakes.

- 1/2 taza de harina de avena.
>1/2 cup of oatmeal.

- 1 coco seco, con el que vamos a preparar 1 taza de leche de coco.
>1 dry coconut, with which we are going to prepare 1 cup of coconut milk.

- Un poquito de nueces, y almendras.
>A little walnuts, and almonds.

- Sal y canela al gusto.
>Salt and cinnamon to taste.



Preparación/Preparation:

1- Primero debemos preparar la leche de coco, picamos el coco, y retiramos la pulpa de la concha, para luego picarla en trocitos pequeños, lo llevamos a la licuadora y agregamos agua caliente, menos de una taza, procesamos bien, y con la ayuda de un colador, obtenemos la leche de coco. 2- Colocamos en una olla, un poco de agua, con una pizca de sal, la avena en hojuelas, y la harina de avena, una vez que esta hierva, le agregamos la leche de coco, mezclamos bien por varios minutos y listo, servimos, y agregamos las nueces y almendras, un poco de canela en polvo y disfrutamos de esta delicia.

Prepare unas ricas croquetas de lentejas, en la freidora de aire, las acompañe con un delicioso tabule y crema de garbanzo que ya tenia lista en la nevera,  casi siempre tengo esta crema en mi nevera, me encanta, le va bien a todo.
>Prepare some delicious lentil croquettes, in the air fryer, accompany them with a delicious tabbouleh and chickpea cream that I already had ready in the fridge, I almost always have this cream in my fridge, I love it, it goes well with everything.

- 1 taza de lentejas crudas.
>1 cup of raw lentils.

- Media cebolla, cortada en cuadritos.
> Half an onion, cut into squares.

- Una ramita de perejil o cilantro.
> A sprig of parsley or cilantro.


- Especias, las de tu preferencia, yo le agregue comino, un poquito de pimentón en polvo, sal y pimienta al gusto.
>Spices, those of your choice, I add cumin, a little paprika powder, salt and pepper to taste.

Para el tabule necesitamos:

-  1/2 taza de trigo remojado en dos tazas de agua.
>1/2 cup of wheat soaked in two cups of water.

- 1 tomate, media cebolla, Una ramita de perejil.
>1 tomato, half an onion, a sprig of parsley.

- El jugo de un limón.
>One lemon's juice.

- Sal al gusto.
>Salt to taste.


Preparación de las croquetas/Preparation of the croquettes:

1-  Debemos remojar las lentejas por lo menos por 6 horas antes de procesarlas.
>We must soak the lentils for at least 6 hours before processing them.


2 - Cuando las lentejas estén bien remojadas, las llevamos a la licuadora, agregamos las especias, y sal, procesamos bien hasta obtener una pasta. Reservamos.
>When the lentils are well soaked, we take them to the blender, add the spices, and salt, process well until we obtain a paste. We booked.

3- Picamos las cebollas en cuadritos, y sofreímos las cebollas, cuando estén bien sofrito la agregamos a la pasta de lentejas, junto con el perejil o cilantro, mezclamos muy bien, y formamos las croquetas, cuando estén listas las llevamos a la freidora de aire, por 10 o 15 min.
>Chop the onions into squares, and fry the onions, when they are well fried, add them to the lentil paste, along with the parsley or cilantro, mix very well, and form the croquettes, when they are ready, put them in the air fryer, for 10 or 15 min.

5 - Mientras se cocinan las croquetas, hacemos el tabule, Picamos el tomate,  la cebolla y el perejil en cuadritos pequeños, agregamos a un bol, y mezclamos, luego agregamos el trigo, sal y el jugo del limón. 
>While the croquettes are cooking, make the tabbouleh. Chop the tomato, onion and parsley into small squares, add to a bowl and mix, then add the wheat, salt and lemon juice.

Los plátanos, se han vuelto mis favoritos a la hora de preparar algo nutritivo y saludable en mis cenas, así que decidí cocinar unos ricos tostones venezolanos,  pero veganos 😁.

Ingredientes/Ingredients:

- 2 plátanos verdes.
>2 green bananas.

- Media Zanahoria.
>Half Carrot.

- Medio aguacate.
>Half avocado.

- Espinacas.
>Spinach.

- Media cebolla.
>Half an onion.

- Sal al gusto.
>Salt to taste.

Preparación//Preparation:

1- Le Retiramos la concha a los plátanos, los Picamos en trozos pequeños, y los llevamos a cocinar en una olla con agua, hasta que estén blandos.
>We remove the shell from the bananas, we chop them into small pieces, and we take them to cook in a pot with water, until they are soft.

2- Mientras se cocinan los plátanos, picamos las espinacas, y la cebolla en juliana, las llevamos a sofreír por pocos minutos, y reservamos.
>While the plantains are cooking, chop the spinach and the onion into julienne strips, fry them for a few minutes, and set aside.

3- Cuando los plátanos estén bien cocidos, le retiramos el agua, y  hacemos un puré, agregamos un poquito de aceite de oliva, y amasamos bien hasta formar una masa.
>When the bananas are well cooked, we remove the water, and make a puree, add a little olive oil, and knead well to form a dough.

4- Luego, hacemos bolitas, y aplastamos con nuestras manos, o como se les haga más fácil, yo prefiero con las manos, para que no se me rompan, les damos una forma circular, y los llevamos a la freidor de aire.
>Then, we make little balls, and we flatten with our hands, or however it is easier for them, I prefer with my hands, so that they do not break, we give them a circular shape, and we take them to the air fryer.

5-Cuando estén listos, retiramos del calor, y servimos, con la espinaca y cebolla sofritas, un poquito e zanahoria rallada, y aguacate, disfrutamos de eta encantadora y deliciosa cena.
>When they are ready, remove from the heat, and serve, with the fried spinach and onion, a little grated carrot, and avocado, we enjoy this charming and delicious dinner.
