Know Filipino Food: Kinilaw na Isda (Fish Ceviche)

Kinilaw is a Filipino raw fish dish. Although the origin of similar techniques called popularly known as ceviche traces its origin back to Peru. In kinilaw, the fish is cured with citrus using the Philippine lemons called kalamansi, the small green lemons you often see in my posts.  We also cure it with vinegar to treat the raw fish. We season it with a little bit of salt and ground pepper. We leave it in the vinegar citrus mixture for 2 hours. After this, it gives the fish that white color and takes off the blood and the fishy smell. We squeeze off the vinegar and citrus mixture. We then put the tiny slices of the other ingredients like ginger, garlic, onions, bell pepper, carrots, chilis, and scallions. It is then ready to serve. However, for our region, we love to add a little bit of cream to it using coconut milk. We cook the coconut milk for a little bit and pour it into the kinilaw.

The taste is of a fusion of all tastes. The vinegar and citrus give it a sour taste. The saltiness from the salt is there. There's a variety of spices from the ginger, chilis, ground pepper, onions, garlic, and the peppers. The coconut milk has a sweet and creamy taste to it.
