First Homemade Recipe: 'Marraqueta' Bread / Pan Marraqueta

<div class="text-justify"> When I was younger I liked all kinds of bread, regardless of the origin or flavor. However, as I grew older I discovered some are of better quality than others, that’s why I decided I wanted to learn how to make my own. Therefore, in today’s post I’m going to show you the recipe of a Chilean bread called ‘Marraqueta’, it only takes a few ingredients and it’s very easy to do, but be careful, you’ll need to follow the steps closely.

> Siempre he tenido una adicción gigantesca por el pan. Anteriormente, no me importaba su origen o sabor mientras fuese pan. Sin embargo, poco a poco he descubierto que hay unos de mejor calidad que otros, así que decidí aprender como hacer mi propio pan. Por lo tanto, en el post de hoy les mostraré una receta de un pan casero conocido en Chile como “Marraqueta”; si bien la receta usa pocos ingredientes y tiene poca dificultad, hay que seguirla al pie de la letra para que nuestro pan quede delicioso.

We’ll need the following ingredients:

- 350ml of warm water
- 30 gr of fresh yeast, (if you’re using fresh yeast, you’ll only need 10 gr)
- 10 gr of salt (it can be less if you don’t like it too salty)
- 500 gr of all-purpose flour.
- 1 egg (it’s not for the actual bread, you’ll see)

> Respecto a los ingredientes, necesitaremos:
•350 ml de agua tibia.
•30 grs de levadura fresca, (si usan levadura seca son 10 grs).
•10 grs de sal.
•500 grs de harina todo uso.
•1 huevo.

Additionally, we’ll need:

- A tray
- A big bowl
- A cooking brush

> Adicionalmente como instrumentos necesitaremos:
-1 bandeja.
-1 bowl grande.
-1 brocha

Steps:

- First, measure the ingredients, you can use a scale or measuring cups.

- Once everything is measured and separated, we put it in the bowl and start mixing the flour, the dissolved yeast and salt. When each ingredient is mixed, start pouring the warm water and beat until smooth.

> PASOS:
Lo primero es medir todos nuestros ingredientes, para ello pueden usar una balanza, igualmente si no tienen balanza pueden usar otro instrumento de medir como tazas medidoras.
Pesados y separados nuestros ingredientes, mezclamos en el centro de un bowl la harina, la levadura (troceada) y la sal que echaremos alrededor y mezclamos con el agua tibia.

PD: I know people say ‘salt kills yeast’ but don’t worry, nothing is going to happen to our precious yeast.

- In a floured surface we begin kneading, pulling and stretching the dough for like 10-15 minutes or until it gets nice and smooth. 

> Ya cuando casi todo este unido volcamos nuestra masa en un mesón con un poco de harina y comenzamos a amasar de afuera hacia adentro esto lo haremos por unos 10-15 minutos o hasta que nuestra  masa esté suave.

 ><h3> <center> Tip: use the correct measures, don’t use more water or dough, because the mixture can change.</center></h3>

- During this next step, we place it in a floured bowl, cover it and let it rise in a warm place (I used the oven) until doubled. Then, wait for an hour.

> Ahora toca el primer leudado de este proceso  dejamos reposar nuestra masa en un bowl con un poco de harina tapada en un lugar cálido (yo usé el horno) este primer leudado será por 1 hora.

- After this, we turn onto a lightly floured surface and start degassing the dough with our fingers, and then knead for a little more.

> Al pasar la hora sacamos nuestra masa del horno y desgasificamos un poco con los dedos , echamos harina en un mesón volteamos nuestra masa y amasamos un poco para sacar mas el aire.

- Next, we shape the dough into small balls, each ball should have approximately 150 gr, we put them next to each other in a floured tray, and then we ‘squish’ them a little bit to begin forming the characteristic form of the ‘Marraqueta’.

> Comenzamos a formar nuestras bolitas de pan, cada bola fue de 150 gramos y las vamos colocando en una bandeja con harina luego colocamos una segunda bola al lado de la primera y aplastamos un poco, todo esto para empezar a dar la forma que caracteriza a este pan “marraqueta”.

- Alright, at this point we have to wait for another hour for the dough to rise in its new form. Then, we grab a stick (it can be a metal or plastic one), cover it with oil and push it in the dough to form a horizontal division.

>  Luego que hayamos hecho bola toda la masa, procedemos a realizar un segundo leudado, igualmente tapamos nuestras bolas de masa y metemos al horno por otra hora más. Luego agarramos un palito, puede ser de metal o plástico, lo empapamos en aceite y realizamos con fuerza una división en ambas bolas de forma horizontal y ahora ya tenemos una marraqueta formada.

- We mix the egg with some water and use the cooking brush to apply the mix in our ‘Marraquetas’, additionally, I added sesame seeds. 

> A continuación, se echa el huevo en un tazón y se mezcla con un poco de agua y utilizamos una brocha para bañar nuestras marraquetas, adicionalmente añadí semillas de ajonjolí o sésamo ya que me gusta su sabor.

- Next, preheat the oven to 200°C and put a tray with boiling water inside, to create steam.

> Precalentamos el horno a 200°C y colocamos dentro una bandeja con agua hirviendo y cerramos, todo esto para generar vapor.

- Bake at 200°C for 25 minutes (ten minutes with steam and fifteen without steam).

> Metemos nuestros panes y horneamos por 25 minutos a 200°C, 10 minutos con vapor y los otros 15 sin vapor.

- And we’re done! The ‘Marraquetas’ are ready to be eaten.
> Listo, podemos observar nuestras marraquetas ya listas para comer.

This type of bread has a great advantage, which is that we can easily split it into four individual pieces. I ate it with some butter and honey.

> La gran ventaja de este pan aparte de ser super rico es que podemos partirlo hasta en 4 pedazos y podemos untarlos con lo que queramos, yo me lo comí con mantequilla y miel.

Fun fact: in Chile some people think a full ‘Marraqueta’ consists of the four pieces and others of two. I honestly think two pieces already form a whole ‘Marraqueta’. How about you?</div>

>Dato curioso: en Chile hay una gran división entre las personas de si una marraqueta son las 4 porciones del pan o solo 2 , yo opino que 2 porciones forman una marraqueta, igualmente dejenme en los comentarios sus opiniones al respecto. </div>
