RICE WITH VEGETABLES RECIPE
# RICE WITH VEGETABLES

## INGREDIENTS to make a rice with vegetables for two people:

*    200g of round rice pump
*    2 cloves of garlic
*    1/2 green pepper and 1/2 red pepper
*    100g of mushrooms
*    2 tomatoes
*    1 teaspoon of paprika
*    Saffron threads
*    25g of peas and 25g of green beans
*    Some broccoli sprouts
*    400ml of vegetable broth
*    Olive oil
*    Salt

## Preparation

1.- In a paellera or in a similar container, wide, we put to heat on a soft fire a trickle of oil. Once it is hot, add the cloves of garlic, onion, leeks and green and red pepper. All ingredients well chopped. We also add the mushrooms, these in larger pieces. Add a pinch of salt and stir frequently while cooking over low heat

2.- After 10 minutes, when the vegetables are partially cooked, add the tomatoes cut into cubes. Mix again and cook another 5 minutes.

3.- Done all this, we put the paprika and the saffron in a glass. Add a tablespoon of water and mix well, until you get a kind of red paste. Add this to the rest of the vegetables and mix everything while cooking for 3 more minutes. This technique is inspired by how they prepare curries in the East. With it, we will make sure that the paprika and curry do not burn and also, we will develop better its aromas

4.- It is the turn to add the rice. Once we add sauté and mix with the rest of the ingredients. We let cook one more minute

5.- Now we add the vegetable broth, better if we do it hot. This one should be a bit salty in the mouth because if it is "just" salt, the rice will then be bland. In quantity, initially add twice as much broth as rice. Then if it is hard, there is always the option to add a little more. Once added, mix to place all the ingredients evenly on the surface of the paella pan. Let cook 10 minutes over medium heat, without stirring the rice at any time

6.- After this time and with the rice still half cooked, we add the peas, the green beans and the broccoli sprouts (the final zone of the same ones, the "bonsai" of the same ones, to call them somehow). Then with a spoon we introduce them a little in the rice, so that they are partially submerged in the broth, they are more beautiful to the sight and they are cooked inside this one. With this to add them now, we will not overcook these vegetables and we will have them al dente. You already know that, the excess of cooking, usually degrades the nutrients of the vegetables. We let cook 10 more minutes.

7.- When all the broth has been absorbed and all the rice with vegetables has been ready, we can optionally sprinkle with dried thyme or rosemary. Delicious!
