***Es un gusto saludar a todos los Hivers amantes de comer y cocinar.***

En esta oportunidad traigo un plato, que es una verdadera exquisitez para los que gustan de comer carnes rojas.

Se trata del asado negro, plato típico de Venezuela  muy preciado, y que está presente en los menús tanto de restaurantes  de comida criolla como de restaurantes  gourmet. 

Este es un plato con tradición, algunos afirman que su creación es caraqueña de la época colonial, lo cierto es que comer un buen asado negro siempre será una experiencia gastronómica inolvidable.

***INGREDIENTES***

1/2 pieza del corte de carne conocido como muchacho redondo. Aproximadamente 1 kl 200 gr.
2 cebollas
1 cabeza de ajo
4 ajíes dulces
2 tomates 
Hojas de laurel
Oreganito
Sal y comino al gusto
2 cucharadas de azucar
Aceite


***INGREDIENTS***

> 1/2 piece of the cut of meat known as "muchacho redondo". Approximately 1 kl 200 gr.
2 onions
1 head of garlic
4 sweet peppers
2 tomatoes 
Bay leaves
Oregano
Salt and cumin to taste
2 spoonfuls of sugar
Oil

***PREPARACIÓN PASO A PASO***

Hacer agujeros con un cuchillo a la pieza de carne

Rallar una cebolla. Machacar los ajos. Cortar el orégano bien menudo.
Cortar un poco las hojas de laurel.
Mezclar todo esto con el comino y la sal. 
Luego, en los agujeros de la pieza de carne introducir esta mezcla.

***STEP BY STEP PREPARATION***

> Make holes with a knife in the piece of meat.

> Grate an onion. Crush the garlic. Chop the oregano very finely.
Cut the bay leaves a little.
Mix all this with the cumin and salt. And in the holes of the piece of meat introduce this mixture.

Colocar el resto de los aderezos por encima de toda la pieza de carne y envolver con  envoplast, por espacio de 1 hora. 
Mientras rallar los tomates, la cebolla y cortar los ajíes en tiras finas, reservar en la nevera.

Meanwhile, grate the tomatoes and onion and cut the peppers into thin strips, reserve in the refrigerator.

Cuando haya transcurrido una hora escurrir muy bien la pieza de carne, y en un caldero con aceite caliente freír por todos los lados, asegurándose de que la pieza quede bien sellada y dorada.

Después de dorar y sellar el siguiente paso es agregar dos cucharadas de azúcar, remover y antes de comience a caramelizar, añadir los aliños rallados que se reservaron, sofreír y agregar 1/2 jarra de agua. Tapar y dejar cocinar por 1 hora.

Al término de 1 hora, retirar la pieza de carne y rebanar como se muestra en la fotografía. Colocar las rebanadas en la salsa nuevamente y dejar en el fuego por espacio de 15 a 20 minutos  para que las rebanadas terminen de absorber el sabor de la salsa. Bajar del fuego.

Y de esta manera queda listo uno de los platos de carne más emblemáticos de la tradición familiar caraqueña. Servir  con arroz  blanco y pan tostado con ajo y perejil,  o si  prefiere acompañar con algo más fresco como una ensalada de su preferencia y plátanos fritos en tajadas.

Leyendo esta publicación me fui muchos años atrás cuando disfrutaba de este manjar de los dioses preparado por mi madre, hasta nostalgia me dio.
Voy a tratar de replicar la receta a ver como que queda.

Yo aprendí a cocinar con mi mamá, y cada vez que preparo alguno de sus platos la recuerdo y me veo pelando ajos, cortando cebollas, y haciendo muchas preguntas... Preparo todo tal cual ella lo hacía.
