Family of three: Some of our Food this week: Week 9

Last week I was on vacation and I wanted to post this round up of recipes but time flies so fast when you're "detached" from daily life, you know how it is! So last week I missed again my weekly food post, in which I share with you some of my recipes.
 
Considerig that I'll be busy in the upcoming months, I'm thinking to write the food collection post every two weeks. Its more flexible this way and I can remain calm and not getting stressed out for not being on time.
Maybe a monthly post will do too, but hopefully I'll be able to share it twice a month.

And now, are you curious to see what were we eating lately? I hope you do 'cauze this is all about in this post. I combined some recipes we had in the last two weeks.

## Shrimp and Tomato Pasta
****

Shrimp and pasta is a favorite, especially for me and Caleb. 
This is pretty much similar with what I've shared already, but this one has tomatoes in it.

Meanwhile the pasta is boiling, add butter ir olive oil in a pan, fry the shrimps on both sides for a few minutes, add salt and pepper. Set aside. You can add a few garlic cloves too if you want. 
Add a few cherry tomatoes until they release the delicious juice, cook for a couple of minutes on medium low. 
Add shrimps again, pasta, and basil on top. I think parmesan cheese can be added on top too. 
Delicious!

## Egg Salad on Bread

I really love this recipe, although I'm not preparing it too often. I wonder why is that but now that I'm thinking, maybe its better this way because I get to enjoy it at maximum! Yumm.

Its such an easy recipe, you wont believe it.
Just boil the eggs. Use a grater to have them shredded. 
Add mayonnese (homemade if possible, but its not mandatory), salt and.....**special ingredient** freshly grated black pepper! 

Black pepper is the key to this recipe. Also I like to add pink peppercorns. Yum yum yum! 
I think I'm going to make it again because I have toooooooooo many eggs! 40 eggs, more precisely! 😅😅

## Oven Baked Chicken and Veggies

As you can see in the image, this recipe doesnt require any instructions or specific veggie list.

I washed all veggies I had in the fridge, add salt and pepper, put olive oil on top and mix well. 
Put all this on a tray, add the chicken too and bake it in the oven for maximum one hour. 

I had upper chicken thighs. but you can use whatever you like: chicken breast, wings, it doesnt matter. For the chicken I used spices as black pepper and paprika, along with the salt.

## Chicken, Cheese Rolls covered in Sesame seeds and Salad

This is a salad I made trying to make a similar salad we use to have on one restauarant in town. 
For the salad, I had a mix rucola, baby spinach and radicchio, cherry tomatoes and roasted red peppers in vinegar. 
For the dressing I used that liquid where the roasted peppers were. It's like a vinegrette but sweeter. 

For the chicken you need chicken breast, egg, flour and panko (dry breadcrumbs). 
Season the chicken with salt and pepper, dip them in flour, then egg and finally, breadcrumbs.
Deep fry in your favorite oil.

For the Cheese Rolls you'll need: sesame seeds (toasted or not), sweet creamy goat cheese, a little bit of dill, salt and pepper. 
Mix together the cheese, dill, salt and pepper. Roll this mixture into sesame seeds. 
You can toast them before for a couple of minutes for more flavor.

## Boiled Sweet Potatoes and Salad
****
This is more tasty with oven baked potatoes but I just didnt have time or the mood to wait so long for them to bake in the oven. 
So I boiled the potatoes, added olive oil on top, a paprika mix spice, fresh parsley and enjoyed it with a salad on the side. 
You can have some meat or bacon if you feel it's what you need, but for us this was enough.

## Shrimp, Broccoli and Rice

Another recipe that doesnt need to many instructions. 
Boil the rice according to package instructions or your favorite method.
Steam the broccoli. 

**Baby carrots**: add butter in a pan and a little vit of water. Add salt and thyme. When its ready, add a little bit of honey.

**Shrimp**: heat a little bit of butter, add shrimp and fry 2-3 min on every side. Add salt and pepper and fresh parsley.

## Easy Breakfast
****
As you can see, we eat eggs very often. Thats because I think eggs are healthy, they're organic and they're like the best protein you can have. 

Fried eggs, mortadella, cherry tomatoes, greek yoghurt and honey.

## Golden Rice
****
This is my son's favorite.
Boil the rice. Nice and fluffy.
Then add a little bit of butter or olive oil in a pan. Saute a little onion, very small. Add turmeric and salt or you can add a curry spice.
Add boiled rice and mix everything.

## Leftover Salmon Dinner
****
Caleb here, four years old, its very easy going on food. He accepts pretty much everything.

But he likes to see the food and to be able knowing whats every food ingredient. Which is why he doesnt eat sauces. He doesnt like mushy food.

Here he has fried salmon and his favorites: cucumber and tomatoes.

## Ginger Carrot Cream Soup
****
This was my favorite when I was in Canada. I ate it at Hofestede's in Chilliwack BC.

Basically, you can search and find really good recipes and I encourage you to do that.
I dont even know exactly what ingredients I used for this one, I didnt take notes but I know for sure there is onion, garlic, carrots and ginger.

We love to serve it with bruschetta or crutouns.

## Egg Omelette Breakfast and Pink Radishes

I was on local market not long ago and in Spring there' always radishes, green onion and green salad.
We like pink radishes, especislly on the side with one omelette.

Here we have a tortilla omelette with bacon and cheese.

## Tomatoes Bruschetta 
****
It's been some time since we had tomatoes on bruschetta. But I used to make it soo often. 
The bread makes this whole recipe. You need a good quality bread and flavorful tomatoes.

In a bowl, add cherry tomatoes cut in half, add olive oil, oregano, salt, pepper and fresh basil. Mix everything.

On bruschetta, add the tomatoes mix.
Serve it with olives, rucola and Italian salami.

Finally, many of the dishes featured here are familiar to me, they are also on the list of dishes we make, with some slight differences. 
There are a few left that I really need to try.

I'm curious to know which one you make! I really love the Egg salad. Thats one of my favorite! It's perfect on top of a very good slice of bread! Maybe some ham too! But not necesarrily.

Shrimp and Tomato Pasta, I make this often but never make it identical. I adapt to what I have in the fridge, different variations come out but the pasta, shrimp, garlic, and chili peppers remain constant...
Oven Baked Chicken and Veggies; Egg Omelette Breakfast; Tomatoes Bruschetta; Bacon & Scrambled Eggs... all of these I happily eat quite often. I love Mediterranean cuisine and try to cook in that style.

Well, thats super easy! Just put everything in a tray and oven bake them. And ofc, dont forget to add your favorite seasonings!
