每年的五月，都是吃小龙虾的伊始，距离第一次尝试小龙虾已经过去了四五年了吧，虽然对它算不上痴迷，但每到盛产的季节，还是会忍不住提议吃小龙虾吧。

最初我们是在外面的餐馆吃小龙虾，因为印象中这种食材处理起来比较复杂，而且味道要求比较高，所以没想过在家自己做。但是外面的小龙虾吃起来总是不那么得劲，因为价格巨贵、味道还不稳定。

一般来说，外面餐厅卖的小龙虾单价在60-100元/斤不等，随随便便一个人得吃2斤以上，那人均就一两百元了，吃得只感觉心疼。如果是在家子自己做，100元可以买好几斤小龙虾，其他配料食材更是高性价比。

这次依然是点哥掌勺，是他主动提出的。婆婆妈八九点就去菜市买食材了，她买的小龙虾18元一斤，一共买了3斤多。我们家里吃小龙虾的主力也就是我和点哥，所以3斤足够了，并且配料也不少呢。

卖小龙虾的商家会提供清洗服务，可以选择去头开背去虾线，但我们通常不会让对方处理地那么彻底，因为据说那会导致肉质不弹嫩，所以我们一般是买回家自己清洗，商家的手法或许太粗暴。

我们只保留了虾尾以及大一点的钳子，以前会保留头部，因为这里面有传说中的“虾黄”，但后来看新闻说这东西其实很脏，所以干脆不要吃了，反正蛋白质丰富的无非就是虾尾肉。

小龙虾先得用油过一道，相比用水煮，这会使其肉质更紧致，水煮的效果真的比不了。同时准备好黄瓜、鹌鹑蛋、豆腐干等配菜，这些都准备之后，点哥就可以正式大展身手了。

他先用适量热油炒熟买回家的麻辣味小龙虾底料，这个环节很关键，不能炒过头，会有糊味，也不能太生，就没那么香了。

炒好料之后，把油炸好的小龙虾倒入锅内，不停地翻炒，让其与酱料融合。炒的比较干燥之后，倒入啤酒。啤酒的量以基本能盖住小龙虾为准，等其沸腾后，再按照食材的煮熟速度分别放入配料。比如黄瓜很容易熟，不想吃得太软就得后放。

大约20分钟的操作，一份美味麻辣小龙虾就出锅了，味道飘满了全屋。吃小龙虾很爽，剥小龙虾就是个不容易的过程了，如果提前开了虾背倒还好，否则可真是要把手指弄痛的。

每年其实也吃不了几次小龙虾，据说这东西也不是太健康，尝尝鲜就好。
