「DIY系列」 肉松蛋糕卷

之前有朋友开玩笑说道,“烘焙就是一个坑 ,进了就出不来了。” 这话的确有道理,我自从买了烘焙工具之后,每天晚上都想做一点小蛋糕或者面包之类的。

昨天在小红书上找了一款简单易做的肉松蛋糕卷,今天把教程分享给大家。

准备材料如下:

鸡蛋 4个

纯牛奶 40g

玉米油 40g

低筋粉40g

细砂糖 40g

葱花少许

沙拉酱适量

猪肉松适量

备注:玉米油一定不能过量,不然的话会影响整个蛋糕的口感,吃起来非常油腻;细砂糖根据个人喜好添加即可。

Step 1

将蛋清和蛋黄分离。蛋清中不能留有一丝蛋黄,并且容器不能有一丁点水滴,不然蛋清打发不起来。

Step 2

先来说说蛋黄的处理。先将蛋黄以Z字形的方式搅拌均匀,依次往蛋黄中倒入玉米油和牛奶并搅拌均匀。再将低筋面粉过筛入蛋黄糊中,搅拌至无颗粒为止,最后再过筛一次蛋黄糊即可。

Step 3

蛋白的打发方式和之前杯子蛋糕的做法一致。将40克的细砂糖分为三份,往里倒1/3的糖,高速打发至蛋白表面有纹理即可。再倒入1/3的糖,打发至糊状,提起成尖壮。最后将剩余的1/3糖倒入其中,再打发成奶油状即可。

Step 4

倒入1/2的蛋白至蛋黄糊中,搅拌均匀。再倒回剩下的蛋白中进行搅拌,同时预热烤箱上下火170度。面糊倒入提前铺好的油纸上,刮平表面,震出多余的气泡,撒上葱花和肉松。

Step 5

放入预热好的烤箱中,烤制17分钟左右。

出炉啦!拿出后将蛋糕翻面,再抹上沙拉酱或者炼乳,加一点肉松,卷起即可。

第一次做的肉松蛋糕卖相确实不太好,但不影响它的口感。争取下次做的再完美一点~有没有很想吃呀?
