* En esta oportunidad  les comparto como preparar  este delicioso pescado (cazón) el cual es familia de tiburones y es muy popular en nuestra región nor-oriental por las populares empanadas de cazón... la que nunca falta en un puesto de ventas de las mencionadas.

☆ Salt and pepper to taste 
☆ Oil 
☆ Seasoning



☆ Cazón 
☆ Ajíes dulces 
☆ Cebolla
☆ Cebollin
☆ Ajo en grano
☆ Hojas de Culantro  (opcional)
☆ color (onoto)
☆ Sal y pimienta al gusto 
☆ Aceite
☆ Sazonador

In a pot with water and salt we pour our dogfish to bring it to high heat and boil it until the skin begins to peel off.



* En una olla con agua y sal vertemos nuestro cazón  para llevarlo al fuego alto y hervirlo hasta que comience a despegar la piel.

At that time it means that it is already at its point, we lower it from the heat and wait for it to cool to proceed to remove the skin and bones, because we will only use the pulp.




* En ese momento significa que ya esta en su punto, lo bajamos  del fuego y esperamos  se enfríe  para proceder a retirarle la piel y los huesos, porque solo usaremos la pulpa.

We have to do this process with our hands, there is no other way because that way we feel if there is skin or bones to remove, then it is washed and the excess water is squeezed out, this in order to make it loose or dry and not with sauce, because even though it is a stew ... it must be dry.



* Este proceso lo tenemos que hacer con las manos, no hay de otra porque así  sentimos si hay piel o huesos que retirar, luego se lava y se exprime el exceso de agua, esto con la finalidad que quede suelto o seco y no con salsa, porque a pesar que es un guiso... debe quedar seco.

Then I put on the fire a cauldron with a little oil to fry our dressings that we have cut into small pieces.




* Seguidamente pongo en el fuego un caldero con un poquito de aceite para sofreir nuestros aliños que tenemos cortados en trocitos pequeños.

To these dressings we add salt, pepper, color, seasoning, half the coriander leaves and half the garlic, cover and allow to integrate over low heat.




* A estos aliños le agregamos sal, pimienta, color,  sazonador, la mitad de las hojas de culantro y la mitad del ajo, tapamos y dejamos integrar a bajo fuego.

At this time we add our dogfish and we integrate it very well, stirring with a trowel or spoon until the seasoning of the dressings takes hold, this is at low flame the same.




* En este memento agregamos nuestro cazón  y lo integramos muy bien removiendo con una paleta o cuchara hasta que agarre la sazón  de los aliños, esto es a baja llama igual.

After everything is integrated, we add the rest of the cilantro and garlic and leave it covered for 5 minutes and our delicious dogfish stew is ready.




* Luego que se integre todo, le añadimos el restante del culantro y ajo y dejamos 5 minutos  tapado y ya está  listo nuestro delicioso guiso de cazón.

This is the final result of this recipe my loves, it is perfect for filling arepas, for empanadas or to accompany it as I did this time, another perfect combination is with black beans ... very tasty !!!



* Este es el resultado final de esta receta mis amores, es perfecta para el relleno de arepas, para empanadas o acompañarlo como lo hice en esta oportunidad, otra combinación  perfecta es con caraotas negras... muy rico!!!
