En esta oportunidad, aprovechando que en esta comunidad, es permitido colocar información cultural-gastronómica del país donde se esté residenciado, no podía dejar pasar la ocasión de mostrarles que en Buenos Aires, donde vivo desde hace corto tiempo, existe una gran variedad de platos típicos y comidas ligeras, que son consumidas por todo el que ha nacido en estas tierras benditas y también por personas que como yo, estamos aprendiendo a conocer y a disfrutar las delicias que preparan. Se trata del Choripán. Como dato curioso, el choripán también forma parte de las comidas nacionales de Argentina, Chile, Paraguay y Uruguay. Les explico a continuación...

Hoy decidí quebrantar la dieta porque estando en mi casa, sentí aquel olor a parrilla y carne asada, que me hizo bajar como autómata, ya que el negocio queda cerca. Al llegar había varias personas adelante, como se puede ver en la imagen anterior.
Ellos compraron sus respectivos choripanes, los comen con ese gran gusto, y además de pie. Se los entrega en una servilleta. Yo estoy sentada porque me cedieron la silla del dueño de la parrilla. A este señor, le llaman **"Rolo"** la verdad no pregunté más.  Me bastó con que me diera permiso, para tomar fotos a su negocio de la calle. Como ven, estoy muy cómodamente, esperando mis panes.

El señor Rolo, prepara el choripán típico de chorizos de cerdo, pero además descubrimos que hace unos sandwiches de entraña de res, y otro de bondiola, la cual es un corte de carne de cerdo muy tierno. A todos estos panes se les agrega el famoso chimichurri, que es una salsa líquida muy condimentada con: perejil, orégano, ajo, vinagre, aceite, ají molido y un poco de sal. Además, se le coloca a cada pan, sea choripán o sandwich, una salsa que la llaman **Salsa criolla**, cuyos ingredientes son: cebolla, pimentón o morrón, tomate, ajo, perejil, todo finamente picado, más el aceite, vinagre, sal y pimienta al gusto.

El brasero es un recipiente metálico, poco profundo, provisto de una fuente de calor, en el centro se coloca el carbón o la leña, hasta que se ponga rojizo. Una vez que la brasa está bien hecha, que es el punto exacto, se distribuye sobre la parrilla, para que se produzca la cocción. De esta forma la carne o el chorizo se cocinan rápidamente.

Luego se corta el pan a lo largo y se coloca el chorizo dividido, se agrega la salsa criolla a gusto del cliente y el chimichurri. El mismo procedimiento se utiliza para los sándwiches de entraña de carne y de bondiola de cerdo.

Llegó la hora de saborear este delicioso Choripán argentino. No sé, si mi paladar sufrió alguna lesión por la gran explosión de sabores cruzados, que junto a mi imaginación y el gran apetito que tenía, se mezclaron para satisfacer mi deseo de comerlos y saciar el gran antojo producto de la oleada de olores que colmaron mi olfato en su búsqueda presurosa. La imagen habla por si sola.
