<p>I received a warm greeting and embrace from all my dear friends from the llano hivers, today I am once again with you with the joy of being able to present a typical dish of the llano and traditional for many in the major week is about auyama guisada (better said pira) I comment that I had the opportunity to present this delicious menu because my wife wanted to eat sautéed vegetables but her brother my brother-in-law came up with a auyama and told me brother-in-law take it so you eat it boiled with butter and cheese but when I grabbed it I said brother-in-law this auyama is not good, perhaps you will wonder why I say that it is not good? It turns out that here we call the auyamas good iguana yolk when they are dry and the bad ones are watery. In order to prepare this delicious dish it does not matter if it is good or bad because the flavor or seasoning will be given by the seasonings that are used in the preparation. >Recibían todos un caluroso saludo y abrazo llanero mis queridos amigos hivers, hoy estoy una vez más con ustedes con la alegría de poder presentarles un platillo típico del llano y tradicional para muchos en la semana mayor, se trata de auyama guisada ( mejor dicho pira ) les comento que tuve la oportunidad de presentar este delicioso menú debido a que mi esposa quería comer vegetales salteados pero su hermano mi cuñado se presentó con una auyama y me dijo cuñado toma para que te la comas sancochada con mantequilla y queso pero cuando la agarre le dije cuñado está auyama no es buena, quizás se preguntarán por que digo que no es buena? Resulta que aquí le decimos a las auyamas buena yema de iguana cuando son secas y  a las malas son aguadas en fin para preparar este rico plato no importa si es buena o mala porque el sabor o sazón lo darán los aliños que se utilizan en la preparación. Así que mis queridos amigos sin mas preámbulo les dejo en la descripción como se prepara la pira o auyama guisada.

These are the ingredients I used for this tasty recipe :


✔️ 1 Auyama.


✔️ 1 Onion.


✔️ 4 sprigs of chives.


✔️ 4 Chili peppers.


✔️ 1 small spoonful of paprika and dried oregano.


✔️ 10 garlic cloves.


✔️ Salt to taste.


✔️ Sugar to taste as it has a sweet touch.



>Estos son los ingredientes que utilice para esta rica receta :


>✔️ 1 Auyama.


>✔️ 1 Cebolla.


>✔️ 4 Ramas de cebollín.


>✔️ 4 Ají.


>✔️ 1 Cucharada pequeña de paprika y orégano seco.


>✔️ 10 Dientes de ajo.


>✔️ Sal al gusto.


>✔️ Azúcar al gusto ya que lleva un toque dulzón.

Step 1 👣


Cut the pumpkin into pieces, remove the peel or shell, wash it and place it in a pot with water to parboil it until it is very soft, prick it with a fork to see if it is soft.

>Cortamos la auyama en trozos le quitamos la cáscara o concha la lavamos y colocamos en una olla con agua para sancocharla hasta que esté bien blanda la pinchamos con un tenedor para ver si ya está blanda.

Step 2 👣


Cut the onion, chives and chili bell pepper into small pieces and crush the garlic cloves.

Step 3 👣


Once the pumpkin is parboiled, let it rest for a while and let it drain all the water and then mash it with a fork to obtain a puree.

>Una vez sancochada la auyama la dejamos reposar un poco y que escurra toda el agua para luego triturar con un tenedor quedando como un puré.

Step 4 👣


We put in a pot, cauldron or frying pan a little vegetable oil with natural coloring onoto, add the onion, crushed garlic, chili, chives, paprika and dried oregano to sauté and add a pinch of salt and sugar to taste because the pumpkin or pira should have that touch between sweet and salty. Once the sofrito is ready, add the mashed pumpkin and mix until the seasonings are integrated with the pumpkin puree.

>Colocamos en una olla, caldero o sartén un poquito de aceite vegetal con colorante natural onoto, agregamos la cebolla, el ajo triturado, el ají, cebollín, la paprika y el orégano seco para sofreír le ponemos una pizca de sal y azúcar al gusto porque la auyama o pira debe llevar ese toque entre dulce y salado. Ya teniendo el sofrito le vamos incorporando la auyama triturada y vamos mezclando hasta que se integren los aliños con el puré de auyama.

This is how the auyama guisada or pira would turn out, which I accompanied my dinner with grated llanero cheese and cassava as it is customary to eat it in my land, while my wife prepared her sautéed vegetables because that was what she wanted to have for dinner.
