My Saturday was a bit useless, I was down a bit. But I am making the most of today being Easter Sunday, yes I am performing chef duties and you might probably not get to see my face(dirty hands). My big bro took just a few of this pictures before I booted him out of the tiny kitchen.


I am making a local meal this time, not like the [Mexican corner beef sauce I made here.](https://peakd.com/hive-168869/@oluwoleolaide/i-made-jamaican-corned-beef-sauce-for-the-weekend) My green leafy veggies ain't green no more, focus my steps and procedures and not on the supposed green leafy vegetables 🍅 🌽 🌶  in the cover image. It all turned dark thanks to the freezer, but still fresh to use for this local deli, it’s better than having to throw them out spoilt. Having to make another painstaking trip to the market would have break my spirit lol. I hate markets and grocery shoppings, I had to do this some days back because I thought my baby cousin who just lost her mom(my aunt) recently would come spend Easter weekend here. She's a better chef than myself so I hoped she was going to make some local delicacies, well: things happens and she travelled out of the city.

That left me to doing the chores myself, this time, my girlfriend is back to her work station, but I had to steal something from her: blending peppers in two ways. One portion very smooth and the other not smooth as you can see from the image below(ignore Mt camera quality please lol)

As of now, I am halfway into my cooking, I am trying to make a local dish called "Efo Riro". The second image is showing my seasoned meats(chicken wings, Turkey, Polo(cow skin) and some cow meat) boiling on my rusty gas. Yeah I know, I'm supposed to boil them separately but screw that. My Gas burner is just two piece plus I am trying to conserve gas and reduce the heat that diffuses into the living room where I am watching soccer yesterday's match previews and highlights.

Anyways, let me drop my steps plus the ingredients used first, when the meal is done cooking I might take pictures to show you all how it looks(but you won't get have a taste lol, pity).

_**Ingredients:**_

- ​​​​​​​​​​​Green Leaves(called Vegetables)
- ​Smoked Catfish
- Smoked Mackerel
- ​Smoked fish(panla)
- ​Pomo(edible part of Cow Skin)
- Turkey
- Chicken Wings
- ​Pepper(Bell, and others with local names)
- ​Tomatoes
- ​Onions
- ​Ginger
- ​Garlic
- ​Iru(locust beans)
- ​Vegetable oil
- ​Curry
- ​Basil leaf
- ​Tyme

​Other Seasonings(Salt, Maggi)
You might know some of these ingredients with other names different from the local names, all the same, they are as healthy as they sound(lol). Plus the seasonings are not I'm excess, just tiny usage of it is enough for me. Now let's get down to how to make them like I did, some people have different techniques not in sync with mine(take note).

_**Preparation:**_

Add vegetable oil in a dry pot or frying pan, let it warm to some extent then add the blended pepper(the smooth and not so smooth). You can hear the frying noise now(lol). Then add all the roasted fish now shredded as seen in the cover image. Also add the locust beans(iru) to the pot, cover a bit to steam before adding all the seasonings.

Take note, the Garlic and Ginger has been blended with the pepper and onions, they serve more healthy purposes in means aside garnishing the meal.

To add the seasonings, I used just two cubes of Maggi and one and a half teaspoon of salt. Add the chicken wings, turkey, cow skin and meat in the already cooking pot now, let it steam with the other "yummy accessories" in the pot as you wash the green vegetables(mine is not dark because it was frozen) on the side. It's diced or cut so you must wash to get rid of sand and other dirt. Strain it in a strainer as you can see right hand side of the cover image while you let the stew cook for about 20mins or less(I love deeply cooked food, the only way I don't get irritated and throw up).

Check now, the stew is smelling cooked already, add the strained green/dark leafy vegetables and stair till its even in the pot. Leave for another 5 to 10mins, 10mins for me. Quench the gas, let it cool down and dish some in the freezer like I did, i can't be doing this stress every day so some will stay in the freezer till its their turn to be devoured.

Semovita, Wheat, Poundo Yam or potatoes or any local swallow, yam, rice, plantain(carbs) goes with this meal called "Efo Riro". Mine will go down in history with Poundo Yam, a special yam flower that seems like a substitute to the real pounded yam. But first I need to take a shower and rest after I am done and clean up all the mess I have made in my small kitchen!
