My weekend munches called Goat meat Sauce...

Meat is a good source of protein, but not just every meat. Some comes with a heavy price, as far as red meat is concerned, it might cause complications later on if care is not taken. Red meat, processed meat, pork, all fall into this category. They have a side effects and its one of the strong debating factor vegans held on to.

Although individuals have their own philosophy about life and its morals, whether eating meat is cruel or not, heaven only knows who's right or wrong. Regardless of the moral conflicts about meats and the health implications, it feels good to have a healthy steak for a meal once in a while.

Goat meat isn't as complicated as cow meats or pork, hence its a more preferred source of meat for me. Not just me, anyone in their mid thirty upward should stay away from red meat and any source of processed meat as much as they can. Your longevity might depends on it in the long run lol.

Below is a goat meat sauce I made for my weekend consumption. Strangely in some part of the world that I know and have read about, Goats are considered Deity. Hence, its a sacrilege thing to do, I mean to eat Goat meat. Fortunately, Goat meat taste the best out all the variety of meat(argue with your keyboard lol).

Of course I didn't kill this one, got it from a local abattoir. Expensive that normal beef yes,but its worth the money.

Recently I have been trying my culinary skills, so this was a walk in the park to prepare. The ingredients needed are as follow:

- 3Kg Goat meat
- Fresh pepper
- Onions
- Green veggies(pumpkin leaf)
- Spices
- Vegetable oil
- Garlic
- Nutmeg
- Table salt
- vinegar(Natural source e.g apple)
- Water

The preparation starts from getting all the ingredients. The goat meat needs to be butchered into most preferred Chunks, you can remove the bones or leave it. I like the bones cooked because it adds this special additional savory to the meal.

Boil the meats till they are tender, before setting on medium temperature on gas, add spices, one teaspoon of salt, onions, garlic, nutmeg and some drops of vinegar. 

Set on the gas and let it Cook for 30 to 45 mins. Goat meats sometime takes long to soften because of the skin/hide. Unfortunately that's the sweetest part of the whole process so its a waste if you skin and throw out in the waste bin.

After cooking for the specified time or a little bit more, remove from the fire and drain with a sieve. The stock water(water drained from the pot is Essential). It gives any Goat meat meal a unique taste.

You must have blended the fresh peppers(bell pepper, red pepper, tomatoes(if you want), onions, garlic, ginger etc). Blend to smooth or not so smooth, either ways goes well.

Now to begin the final cooking of the sauce, pour some vegetable oil in a frying pan or pot, let it heat up then pour the blended pepper to fry for some minutes. 

Add spices to taste, half a teaspoon of salt(remember there's salt in the water drained from boiling/cooking the meat). Pour the drained stock water from the goat meat into the frying pepper sauce, add the meat, stir and let it simmer for 5 mins or 10mins if you like deeply cooked meals like me.

Finally,add the freshly diced green leaves(pumpkin leaf). It mush have been thoroughly washed before chopping into bits. Add into the content on fire, stir and let it simmer for additional 6mins. Taste to check if the pumpkin leaf is cooked well. Turn off the heat and let it cool down.

Serve with rice, or any tuber of your choice or eat alone. Check our mine looked like below after the final process. The first image above shows when the meat was added to the pepper sauce before the diced pumpkin leaves was added. Bona petite!

Goat meats also taste best when grilled, roasted or deeply fried. Its a delicacy in my culture and when served in any occasion, it is of great value, aside eating at home with friends and family.

Hell yea, goat meat is really delicious and has thick flavor.  Yes, its expensive too!  In our country, we cook its meat as caldereta (one with thick favourful sauce), its head as “sinampalukan” (cooked in unripe tamarind to have sour soup, its intestines as “papaitan”(bitter soup) and the skin as “kilawin”... all of its parts are edible.  These dishes are popular to liquor and beer drinkers 😅😂 They enjoy eating and munching these food while drinking!
