Tuesday is the day in which I take advantage of the ideas offered by ECency.
Today's theme talks about desserts and, for me who in the past had my own pastry shop, it's truly a wedding invitation!

Before starting, I would like to give a special thanks to @mypathtofire for their efforts, thank you very much!

In Italy we have many good sweets, in my city they are part of the culture of the people.

Every festivity has its typical desserts, even if, to eat them, we Calabrians certainly don't wait for the festivities eh eh!

In Reggio Calabria, the city where I was born and where I live, the day when desserts cannot be missing from the table is strictly Sunday.
Usually Sunday lunch always ends with a nice tray of pastries!

As far as I'm concerned, over time, I've gotten into the habit of not considering main meals finished unless something sweet has been eaten; it doesn't necessarily have to be something sophisticated, even a square of chocolate is enough.

In general I love all desserts, but I have a preference for coffee ones and my absolute favorites are tiramisu and profiteroles.

>If you're wondering yes, when I make profiteroles I put a little coffee in the couverture chocolate, it makes them even better!

When I can, even at home, I prepare them; I often make tiramisu which is also my wife's favorite dessert and, all in all, it's quite simple and quick in terms of preparation.

If, on the other hand, I have to buy some pastries (although when I have time I also make my own) there is a pastry shop in Reggio that is my favorite, it is called "Kenia" and the owner, as well as pastry chef, is truly a champion of desserts; in the past, when I was opening the restaurant in Tuscany, he gave me more than one tip.

Sweets, as far as I'm concerned, are eaten in company, preferably with the closest people; a simple pastry immediately makes a special occasion, or at least, this is the feeling it gives me.
This is probably due to the fact that in the past, in the family, they ate almost exclusively on Sunday which, at least in my part, is the day of celebration.

I must say that, as far as my tastes are concerned, they have remained constant over time... I have always liked all kinds of sweets, with a preference for those I told you above.🤤

Today, many define confectionery as an art and I think it's true, especially as regards the decorative part of modern desserts, it takes a lot of dexterity and creativity; the greatest pastry chefs, however, affirm that pastry is "chemistry", those are the ingredients and those are the quantities and, at least as regards the great classics, one cannot deviate one iota otherwise the dessert fails and changes in taste.
Naturally this does not apply when experimenting and creating, it is also true however, that once the recipe has been found there too it is a matter of repeating everything precisely.

As you will have understood I have a great sweet tooth but, if I love pastry in general, it is also for an emotional discourse after all, I started my adventure in the kitchen with sweets and from there I made my evolution passing from the rotisserie up to the restaurant kitchen; I certainly don't define myself as a cook or a chef, however, in my small way, I hope to be at least a good assistant cook.

Martedì è il giorno in cui approfitto degli spunti regalati da Ecency.
Il tema di oggi parla di dolci e, per me che in passato ho avuto una mia pasticceria, è davvero un invito a nozze!

Prima di iniziare desidero fare un particolare ringraziamento a @mypathtofire per l'impegno profuso, grazie davvero di cuore!

In Italia di dolci buoni ne abbiamo tantissimi, nella mia città poi fanno parte della cultura della gente.

Ogni festività ha i suoi dolci tipici, anche se, per mangiarli, noi Calabresi, non aspettiamo certo le festività eh eh!

A Reggio Calabria, la città in cui sono nato e vivo, il giorno in cui i dolci non possono mancare in tavola è tassativamente la domenica.
Solitamente il pranzo domenicale si conclude sempre con un bel vassoio di pasticcini!

Per quel che mi riguarda, nel tempo, ho preso l'abitudine di non reputare i pasti principali conclusi se non si è mangiato qualcosa di dolce; non deve necessariamente essere qualcosa di sofisticato, basta anche un quadratino di cioccolata.

In generale amo tutti i dolci, ho una predilezione però per quelli al caffè e, i miei preferiti in assoluto sono il tiramisù e i profiteroles.

>Se Te lo stai chiedendo si, io quando faccio i profiteroles metto un pó di caffè nel cioccolato di copertura, li rende ancora più buoni!

Quando posso, anche a casa, li preparo io; faccio spesso il tiramisù che è anche il dolce preferito di mia moglie e, tutto sommato, è abbastanza semplice e veloce a livello di preparazione. 

Se invece devo comprare dei pasticcini (anche se quando ho tempo faccio anche quelli da me) c'è a Reggio una pasticceria che è la mia preferita, si chiama "Kenia" ed il proprietario, nonché pasticcere, è davvero un fuoriclasse del dolce; in passato, quando stavo aprendo il locale in Toscana, mi ha dato più di una dritta.

I dolci, per quel che mi riguarda, si mangiano in compagnia, meglio se delle persone più care; un semplice pasticcino rende subito un'occasione speciale, o quantomeno, questa è la sensazione che a me regala.
Probabilmente questo è dovuto dal fatto che in passato, in famiglia, si mangiavano quasi esclusivamente la domenica che, almeno dalle mie parti, è il giorno di festa.

>È anche vero che poi ogni occasione per far festa è buona, quindi è buona anche ogni occasione per mangiare un dolce!

Devo dire che, per quel che riguarda i miei gusti, con il passare del tempo sono rimasti costanti... mi è sempre piaciuto ogni tipo di dolciume, con la predilezione per quelli che Ti ho detto sopra.🤤

Oggi, molti definiscono la pasticceria un'arte e credo sia vero, soprattutto per quel che riguarda la parte decorativa dei dolci moderni ci vuole molta manualità e creatività; i più grandi pasticceri però affermano che la pasticceria è "chimica", quelli sono gli ingredienti e quelli i quantitativi e, almeno per quel che riguarda i grandi classici non ci si può discostare di una virgola altrimenti il dolce non riesce e cambia nel gusto. 
Naturalmente questo non vale quando si sperimenta e si crea, è anche vero però, che una volta trovata la ricetta anche lì si tratta di ripetere ogni cosa in maniera precisa.

Come avrai capito sono molto goloso di dolci ma, se amo la pasticceria in generale, è anche per un discorso affettivo in fondo, ho iniziato proprio con i dolci la mia avventura in cucina e da lì ho fatto la mie evoluzione passando alla rosticceria fino alla cucina da ristorante; non mi definisco certo un cuoco o uno chef però, nel mio piccolo almeno un buon aiuto cuoco mi auspico di esserlo.
