Velouté Dubarry

Salut à tous, une petite crème de choux-fleurs aromatisée à la badianne avec des sommités juste revenues au beurre.

il suffit d'un choux fleur et de crème fleurette.
Prélever quelques sommités et faire cuire le reste de choux fleur à l'étuvé avec deux ou trois étoiles de badiane.

Une fois cuit mixé le tout avec de la crème fleurette et un peu d'eau de cuisson. Pendant la cuisson vous avez fait compoter sans coloration les sommités avec un peu de beurre.

Verser votre crème dans un bol et ajouter les sommités.
