*Hoy para mí entrada, les tengo una muy buena propuesta de muffins salados. Esta receta es especial para desayunos ricos y saludables, o quizás para la hora de la merienda.*

*Se trata, de unos ricos y suaves muffins compuestos de huevos, aliños varios, queso amarillo y embutido. Si deseas una versión más saludable, puedes retirar el embutido de la preparación y quizás añadir pollo desmechado a la preparación. Con este tipo de receta base, las posibilidades de combinación son numerosas y sanamente deliciosas.*

*Lo mejor de este desayuno, es que además de lindo, es rápido de preparar y muy versátil de combinar. Podrías agregar unas tostadas o una ensalada, aunque desde mi lado he decidido combinar con jugo de Guayaba (mi favorito).*

## *Ingredientes:*

📌 4 huevos.
📌 4 ajíes dulces.
📌 1/2 cebolla blanca.
📌 1/2 tomate.
📌 5 rebanadas de embutido ahumado.
📌 4 rebanadas de queso amarillo.
📌 Sal, cubito, paprika.

*Aceite para engrasar.*

## *Preparación:*

A.- Colocamos los huevos en un tazón o recipiente cómodo. Ver figura 1. Agregamos a gusto la sal, paprika y cubito. Ver figura 2.

B.- Tomamos nuestro batidor manual, en mi caso he usado uno tipo globo, y mezclamos bien por unos minutos. Ver figura 3.

C.- Cortamos en trozos pequeños los ajíes dulces, tomate, cebolla. También cortamos el queso y el embutido. Ver figuras 4 y 5.

D.- Todo lo que hemos cortado, lo agregaremos en los huevos que previamente hemos batido. Mezclamos suavemente. Ver figura 6

E.- Tomamos nuestros moldes de Cupcakes o ponquesitos, colocamos una suave capa de aceite vegetal.  Ver figura 7. Colocamos porciones en cada uno de los moldes. Ver figura 8. Aconsejo no llenar completo, debido a que suben de tamaño y luego bajan un poco.

*Llevamos seguidamente al horno. Hasta que se doren en los laterales. Desde mi lado, los he cocinado en mi estufa eléctrica. Coloqué los moldes sobre una base amplia y les coloque una capa. Ciertamente el tiempo de cocción es más, sin embargo han quedado muy buenos.*

*Mientras van en cocción, irán aumentando de tamaño y luego disminuyen un poco. Están listos, al dorar los laterales y mínimamente la superficie.*

*Desmoldamos suavemente. Acompañamos con un jugo o tostadas.*
