There one man was selling Carrots with leaves. Or we can say **Carrot greens**. In grocery shop we probably wont find carrots with leaves attached. I never thought to buy the greens,I used to throw them. *But the vendor said me to take the carrot greens. He said that it is edible as carrots themselves*. They are delicious and can make curry, chutney or just toss and have it. The carrot greens are very healthy and good for the people who suffer anemia and it controls the cholesterol in our body. So, I thought to take carrot greens and make something which I and my family never had before. There are many ways to make carrot greens like pesto, salad or curry. In my today's blog I am going to share a recipe of **carrots green dry curry**.  The carrot tops have earthy flavour and very similar to Parsley or coriander. **So let's start to make a delicious carrot greens dry curry** **Ingredients** •carrots greens- 2 cups •carrots-1 cup •potato-1 cup •onions-½cup •turmeric powder-½tbspn •salt-½tbspn •garam masala-½ tbspn •garlic & ginger paste-1tbpn •greenchilies-1 tbspn •water-½cup **** **METHOD** 1.Wash the leaves well, so that the dirt or mud can be removed.  2.chopped it nicely.   3.chop only thin stems.  3.chop carrots and potatoes.    4.now heat oil/ghee(clarified butter) in a pan.   5.add cumin seeds, green chilies, chopped onions and stir fry till the onions changes brown color.    6.now add ginger garlic paste.  7.add carrots and potatoes. Mix it.   8.now add carrots greens and water. Add salt, turmeric powder, redchili powder. Mix all well.     9.cover the pan and cook for 15 min.    10.mix and cook till the carrots and potatoes are cooked well. Add garam masala.      It's ready to transfer in a serving bowl.  Now serve it with chapati or roti. Trust me guys this is delicious curry. If you want to add some lemon juice then you can.
