Prepared Stuffed Pointed Gourd Curry (Bengali dish Potoler Dorma)
*Hello hiveans! Hope all are doing well*.

I was born n bought up in **Kolkata, West Bengal**. So I love Bengali dishes like luchi with aloo bhaja, Jhalmuri, Phucka, and vegetarian dishes like raw Papaya stir fry, potol dolma and many more. 

I'm my today's blog I am sharing a recipe of **Potol Dolma/Dorma.** **One of the most important rituals of Bengali Culture, *Jamai sasthi,* is dedicated to offerings special treat to the son in law with fruits and food. Both veg and non vegetarian food are prepared and this Potol Dolma is no exception to it**.

Potol dorma means stuffed vegetable Pointed gourd. This bengali delicacy is usually made using prawns and fish. But in this recipe it is vegetarian and low calorie version of potol dorma. It is stuffed with Indian cottage cheese and dry fruits. **Nevertheless to say different variations of potol dorma has their own unique taste.**

This is delicious dish that can be served with steamed rice or roti.

*So let's start the recipe-*

●Wash and dry the potol(pointed gourd). Chop off the tip from both the ends of potol. Scrape the skin very lightly using a peeler or knife, so that the thick skin is removed.

●Now with the spoon handle, carefully scoop out the seeds of pointed gourds from inside. Keep those seeds aside.

**Making the Paneer Stuffing**

●Make a paste of grated coconut,green chillies, seeds of pointed gourd and ,garlic in a mixer.
Grind to a coarse paste adding splashes of water, as needed.

●Now heat oil in a pan,add the paste which we prepared, crumbled paneer ( cottage cheese),  raisins,garam masala, salt and sugar.

●Mix and saute the stuffing until it is cooked. With your fingers,mix the stuffing gently to make the texture uniform.

●Heat Mustard oil in a pan, shallow fry the potol until they start to turn light brown in color. Sprinkle salt while frying.
Remove and keep aside.

●Fill them with the  stuffing gently pressing in with your fingers. Make sure that the potol are tightly packed.

●Now heat oil in a kadhai then add cuminseeds, bay leaves, cinamon stick, add tomato onion paste,, ginger chilli puree, turmeric, red chili powder, salt  saute till the raw smell goes away.

●Add cashew paste and mix well

●Add little water and cook for 5 mins.Add salt ,little sugar and let it simmer for 5 to  8 mins.

●Gently add Stuffed potol to the gravy.

●Cover and cook at meduim heat for almost 10 mins.

●Once the vegetable is done, add sprinkle of gram masala, one tblspoon of ghee and gently mix. 

●Serve with hot rice or Chapati.

Garnish it with fresh cilantro and a dollop of Ghee to Rice and enjoy the dish.

I made some paranthas of the same stuffing of Potol Dolma. It's leftover stuffing so I thought to made some paranthas🤭.
