<center> **¡Bienvenidos y bienvenidas!** Nuevamente con ustedes esta semana; es mi deseo compartir dos experiencias que han resultado ser muy significativas ya que, de un mismo ingrediente extraigo dos productos realmente maravillosos como lo son: la melaza de papelón y vinagre de caña; ya en un artículo pasado les he dejado el proceso para obtener el vinagre de las conchas de mango, un proceso similar, pero con sabores, aromas y colores super diferentes. </center>

<center> Iniciaré contándoles que dentro de las plantas que tenemos sembradas en nuestro patio está una que amamos y disfrutamos mucho en familia; mascar, mascar y mascar; uhm, uhm, uhm… ésta planta es la caña de azúcar; delicioso cultivo, bondadoso y de maravillosas virtudes.

Considero importante aprovechar la vida al máximo, agotar todas nuestras fuerzas para emprender nuevos retos y que nada nos detenga para alcanzar nuestros objetivos y que nadie me diga que no puedo comprar o que no puedo tener  porque no se consigue, esta agotado o algo así por el estilo; puedo decirles que tengo aproximadamente dos años sin comprar vinagre en ninguna tienda, ya que preparo en casa distintos tipos de vinagre, por allí  ahorro un dinerito importante ya que el vinagre lo utilizamos en casa para todo: en la cocina, para la desinfección y limpieza de todas las áreas, para desmanchar ollas y utensilios, para la higiene intima personal, entre otros usos. De igual, siempre tuve el deseo de preparar nuestro propio endulzante, natural y mucho mas sano que el azúcar refinado y ya aprendí a hacerlo, estamos en el proceso de masificar su producción en casa y así poder decir: No compro mas azúcar refinada, vamos en buen camino.

Lo primero es cortar una buena cantidad de nuestra caña de azúcar; en casa le pido apoyo a mi esposo, ya que es una labor un poco ruda para pelarla; todo lo hacemos a mano, aún no tengo un trapiche casero para hacerlo, entonces las cañas las pelamos con un cuchillo (de contar con un trapiche no es necesario) una vez peladas, las pico muy pequeñitas para picar en la batidora eléctrica, esto hace que se remueva la fibra y aflojen sus jugos.

Procedo a extraer (lo hago con un trapo y un exprimidor de naranjas) todo el jugo de esta fibra, coloco por porciones en un trapito muy limpio y exprimo muy bien, así extraigo todo, todo el jugo dulce y rico de la caña; una vez terminado, pongo una porción en olla de acero inoxidable y coloco a cocción a fuego mediano removiendo con paleta de madera constantemente, muy pendientes y con cuidado ya que salpica y puede quemarnos; removemos y removemos hasta que espesa y alcanza una consistencia gomosa que nos indica que está lista, expende aromas divinos, elixir de dioses, ¡ caramelo de ángeles! Así, procedemos a vaciar en un molde o bandeja, dejamos enfriar y listo nuestra panela, papelón o melaza, depende del punto de espesor que queramos darle.

La utilizamos para endulzar nuestro café, lo hacemos como caramelos caseros, como melaza tipo miel de caña y envasamos.

Como les indique anteriormente les dije que con una parte de su jugo hacemos melaza o papelón y con la otra parte hacemos vinagre;  la dejamos en proceso de Pura fermentación, le añado a un litro de su jugo una media cucharadita de levadura instantánea y remuevo muy bien, para que se produzca en él el Etanol de forma más rápida, es decir, alcohol, dejo que ese producto de vino se fermente mucho, se oxide parcialmente y se produzca acetaldehído y éste en ácido acétido, que es el vinagre. Debo decirles que amo este producto, es de un sabor exquisito y bueno, parto de que es mucho más sano, natural y por ende muy beneficioso a nuestra salud. Les comento que es muy importante dejarlo fermentar y tomarse su tiempo perfecto para obtener un producto de alta calidad; en este caso, suelo dejarlo casi dos meses en reposo, en envase de vidrio preferiblemente, en un lugar de mi cocina y lo tapo con un pañito poroso, pero sin paso a suciedades ni animalitos y lo tapo con un trapo oscuro.

I must tell you that I love this product, it has an exquisite and good taste, I start from the fact that it is much healthier and more natural and therefore very beneficial to our health. I comment that it is very important to let it ferment and take your perfect time to obtain a high quality product; In this case, I usually leave it almost two months to rest, preferably in a glass container, in a place in my kitchen and I cover it with a porous cloth, but without any dirt or animals and I cover it with a dark cloth.*

Un vinagre verdaderamente exquisito; lo utilizo mucho para el escabeche de berenjenas; los invito a prepararlo. Es importante que sepan que de cualquier bebida azucarada podemos preparar vinagre, es realmente fácil y en casa nos aseguramos de ser autosustentables y de alimentarnos de manera segura, sólo hay que ponerle mucho Amor, por que sin Amor todo lo que hagamos será insípido, ¡el Amor como el sentimiento que llena todos nuestros recipientes y recetas!!!
