DISPUTE THE QUEEN OF TOASTIES: WIN HIVE THIS WEEKEND!

#### I am the Undisputed Queen of Toasties. 

And it's the weekend, so if I want a toastie, I'm going to have one. I mean, melted cheese and baked beans are part of a **moderate diet**, right? Don't judge me.

Besides, I'm married to an Englishman, so baked beans on toast is an essential meal in this household. We do normally have a debate about *how* to serve them - I like melted cheese on top and jalapenos, he likes cheese underneath and lashing of worchestershire sauce. 

The trick is grated cheese and making sure it goes all brown and bubbly. A little care and patience is required. I must say the slightly burnt edges adds to the overall experience. Soft cheese, hot enough to burn the roof of your mouth, salty and sharp jalapenos, sweet baked beans and crunchy toast. 

I grew up on these toasties. We'd go down the coast on weekends and coming back late on a Sunday night, it'd be grilled cheese for dinner. Mum would layer mushrooms on them, or parsley, or maybe some basil. Jamie nearly died when he saw vegetables on my grilled cheese - it certainly wasn't what he grew up with in England. *But he's definitely won over.* 

I do apologise to the plant based, non dairy folk here. Though I'm *largely* on a vegan diet, cheese toasties have me breaking the rules. Even my son's vegan girlfriend goes weak at the knees, and has them with vegan cheese. 

Oh and I'm also the Queen of *pan-fried* cheese sandwiches (kinda like a jaffle without the jaffle iron, with lots of melted butter to stop it sticking to the pan). Again, the trick is patience, so the cheese fully melts. You haven't lived til you've had my pizza jaffle with fresh basil, tomato paste and olives.

Hahah that's awesome. I wasn't entirely sure what a Toastie was! I think this looks delicious so I might have to try and partake in this one. We haven't made a grilled cheese in a really long time and never like that so I might try that.

I'm guessing it doesn't count if it's got a delicious farm-fresh egg underneath it? :D

What do you call these over there? I know they can be called all sorts of things. I mean, it's grilled cheese, but it's toasted on one side, so I'll call it a toastie.. I'm not pedantic about what you call it to be honest! Baked beans and cheese on toast under griller is just hte long way round hah! Grilled cheese is ssssssssssooooooooooooo good! I'm sure your boy will love to help.

cheese is a real temptation, if I could put cheese on all my meals I would do it without a doubt. I just finished dinner and seeing the pictures of your sandwiches has made me hungrier hahaha.

I love me a good toastie Riv, another thing we have in common. However, *here comes the bad news,* I'm limiting carbs and so *no weekend grilled cheese for me!* ☹️

If I was having one though...

When out camping we always bring one of those Sharwoods or Pataks Indian paste things, the jars - Like Madras curry or some such. Spread some of that on bread, add cheese, butter both outsides of the bread and into the cast iron toasty maker thing and onto the coals...You'll never look back. Not too much paste mind, just *paste to taste*...Which is a convenient little rhyme. 

Sometimes we add baked beans too.

So one of them is what I'd be having if I was *on the carbs*.

All you have is just a grilled bit of bread with some cheese melted on top aka grilled cheese on toast - a **cheese toastie** is very much different and so you need to be corrected. Here's where you went wrong Queenie:

# Toastie King Havey's Guide to Cheese Toasties

## Step 1 - Ingredients & Tools

- Kettle (to boil water to make your tea of course but that's by the by)
- Butter (salted for a bit of extra oomph when it comes to that first crunch)
- Cheese (Davidstow is near where we stayed in Cornwall last month so we went local - it's lovely)
- Bread (Kingsmill 50/50 is probably your best bread for this but I like changing it up from time to time and see what other breads work, nothing else has come close so far - insider information, you're welcome 😉)
- Sandwich Toastie Machine - for obvious reasons - it's called a Toastie for a reason 😜
- Bread board to cut cheese 
- Butter knife
- Cheese cutting knife
- Plate
- Worcestershire Sauce

## Step 2 - Butter The Bread

Firstly, turn ON the toastie maker for maximum efficiency (you don't want to be waiting now)!

Then, take two slices of bread out of the bag, keep them together as you place them on the bread board and lift and peel the top slice to the right like you're turning a page in the book - this is important and not a fine detail you want to miss. You'll see why later

Next, you want to put a light covering of butter on both sides and make sure you have reached the edges, lest we have issues later on. You don't want to go too heavy otherwise you will find yourself mopping butter off the work surface - not ideal.

## Step 3 - Cut Cheese

Always a delicate affair depending on how much cheese you like but you can'e go over board otherwise you'll end up with a perforated bread layer and no-one likes cleaning that up as cheese seeps all over the toastie maker - trust me.

You're probably looking at 4 slices on average, depending on bread loaf cross-sectional area size - the picture below is probably slightly too much, as you'll see (every day is a learning curve in cheese toastie land).

## Step 4 - Dress The Toastie Maker

Take first slice of buttered bread and place it butter side down on to the hot plate - this should start sizzling a teeny bit.

Then, pop your sliced cheese on top, making sure it doesn't go over the edges and leaves your crusts available to form a closed joint - this will prevent over spill of melted cheese. We can't have that going to waste!

Second layer of buttered bread goes face up to complete the dressing up.

## Step 5 - Close the Lid, Wait 3 Minutes

Make sure when you close the lid, you keep the bread inside, you may need to use your bread knife to push against the bread as you close the lid - be careful not to burn yourself. This would ruin the experience.

## Step 6 - Toastie Out

You're looking for a golden brown colour on the bread like below which will give you a perfect layer of crunch. As you can see, a little over zealous on the cheese this time around but the end result is still magical.

## Step 7 - Worcestershire Sauce On

As much or as little as you like, Worcestershire sauce adds a nice tang to the whole experience. If you have any cheese bits left over on the chopping board then quickly sprinkle those on top of the toastie once you open it for a quick additional melt!

@livinginuktaiwan, here you go - Nicky has corrected me on the terminology (I call anything with any form of toast and cheese a toastie). The above is what I'd call a jaffle, because it's made in a jaffle press with the ends stuck together. 

Like Jamie, the worchestershire sauce is staple for any Brits who want to ruin the taste of their food. But you're living in the UK, so I think they kick you out if you don't do this. 

I love the old school machine, @nickhavey - all you need is a teamaid and you're set to go in the morning! 

You know, I think I liked grilled cheese on toast better because you get all that browned bubbly cheese which is an utterly different flavour. 

And to be honest, I quite like Lea and Perrins too.....

They look delicious, like easy-to-prepare pizzas. In my case I'm not a vegan, so I would add a lot more cheese, I'm not a fan of cheese but when there's too much of it on top of the bread I love it. 

I just had dinner, now seeing this the appetite returned, how cruel you are!!

Oh my gosh @nickyhavey and I were just having a laugh yesterday about toasties as I think he eats them pretty much every day. I said I'm going to start calling my avocado toast a toastie instead. 😂 Might just have to join in with a vegan version after I get my fresh loaf of sourdough bread from the farmers market tomorrow.

Look, I've tried them without cheese, and they are never as good. I'll pretty much be vegan 95 percent of the time - but give me a toastie and all my health and ethical plant based advocacy goes out the window.

Haha, well I must say the vegan cheeses just keep getting better and better.  Though given a choice between cheese and bread, you can have the cheese.  I don't know how people live without freshly baked bread, hahaha!

I would have to agree with @nickhavey that I know toasties the way he makes them. So yummie.. I don't have a toaster now, haven't had one for maybe 5 years already, so if I really want one nowadays, I use the grill pan to give it the "toasty touch" lol...but thanks, you now got me hungry! lol
