Many years ago I used to go for a sleepover at a friends place. Her parents were Hare Krishnan at the time (I don't think they are now!) and were staunch vegetarians, which was rare back then. My family were the only other vegetarian family we knew. I used to love going there as her Mum would make the most AMAZING meat free dishes. She made a kickass tofu cheesecake with an apricot glaze on top - I wish I could remember the recipe as I just love it. 

One thing she used to make was tofu and tomatoes on toast which my Mum had never discovered. It was probably too salty and sweet for my mother, who was always going on about nutrition, but I loved the saltiness of it. IT was basically tofu fried in tomato sauce and soya sauce in equal measures, with fried tomatoes, which would soak into the toast in a delicious manner.

My 'grown up' version of this dish is a little more nuanced, but it still has that salty sweetness to it that sometimes you crave. If you miss bacon, this isn't it - only that it is a good subsitute as the tamari does give it a saltiness.

I also don't like to eat a lot of bread these days so often I eat it without the bread and find it filling enough. 

My recipe goes a little like this: 

3 - 4 slices of tofu per person
A good splash of olive oil 
Tamari and sriracha, to taste
Fresh coriander
1 tomato per person
A sprinkle of cummin

Heat the olive oil in a pan and add the tomatoes and tofu. Give the tofu a generous splash of tofu and tamari to coat and let it brown on one side. As it fries, sprinkle with ground cummin and fresh coriander. Turn and fry on the other side. The sauce will reduce considerably - you want the tofu to be browned on both sides. YOu can add more sauce, if needed, when you serve, but I don't tend to as it's salty and yummy enough. Add more fresh corianer and serve, if desired, on toast.

I know not everyone is a tofu fan and like everything, it should be eaten in moderation. However, I bloody love this dish and do eat it about once a month as a treat!
