How To Make a Date & Ginger Syrup [Plus, One Idea for A Quick & Easy Dessert)

I've been getting into making herbal syrups of late. Elderberry and thyme was a winner, as was blackcurrant, cinnamon, star anise, and ginger. Made with simmer fruit, lemon peel to thicken, water, raw honey and love, they are absolutely delicious on coconut yoghurt or drizzled onto cereal. 

But if you don't do honey, here's another option. The idea is to make a very strong infusion of a medicinal herb or tea, and blend it with softened dates. It's another way to get the medicinal benefits of herbs in a fun and tasty way. We shouldn't just be having plants that are good for you, but adding them to our daily meals, breakfast, lunch and dinner!

Ginger is renowned for being wonderful for the immune system as well as the digestive system. It has anti-inflammatory and antioxidant effects, as well as being antiviral and antibacterial. It's a perfect root for this virus season, and we should be consuming it in as many ways as we possibly can. Hence, I decided to make my very, very strong infusion by simmering ginger root in water until it's clear that it's made a very strong decoction. 

You can, however, simply pour hot water over the herb of your choice and leave overnight. 

Then, you want to get this water and soak the dates in it. Think a couple of handfuls, and covering with the infusion or strong tea. Let the dates soften. You could also hasten the process by simmering it all at once - herb, date and water! 

Then, put through a blender til very - well, pasty! Feel free to spread on toast or add to your muesli, or use as a sweetener in sweet recipes.

#### Coconut Yoghurt, Cacao and Date Delight

Oh my goodness this is delicious - and so easy! 

Simply mix a tablespoon of cacao with enough herbal tea, water, strong coffee or herbal syrup to form a thick paste. Place a spoonful in the bottom of your bowl. 

Add half a cup of coconut yoghurt and a dollop of date syrup. 

Voila! 

Mine's topped with dried calendula for contrast - if you've seen my recipes before you'll know I put calendula on top of nearly everything! Whilst eating petals like this is fairly weak medicine, I like to think the real medicine comes from calendula's sunny disposition, putting a smile on our faces. Add that to chocolate and sweet dates and that's enough to cheer anyone up!

It looks delicious! I love dates, but we don't get enough of them around and they are pricy. But I would definitely try to get a syrup like this done.
