Scrambled Eggs with a Twist

## Don't count the chicks before they hatch

To me, this means your efforts may not always be rewarded. Not all your investments will come back with a profit. But I did not know that there was a literal translation to this saying. Did you know that chickens lay eggs whether they were fertilized or not? Yes! Chickens don't know whether their eggs have been fertilized or not. They would just lay eggs, sit on them and then wait and see if they will actually be chicks.  And they like to lay eggs in clusters and actually targets to make a clutch that usually consists of a dozen eggs. Interesting, isn't it? 

And what's even more interesting is that the eggs that we eat *(almost all of them)* are unfertilized eggs. So we are technically not eating baby chicks. I got curious about this when my husband told me that one of his colleagues told them that the chicken eggs we eat were actually their menstruation. I said that was outrageous and also that he should have waited until after I finished eating my scrambled eggs before he dropped that kind of egg bomb on me.

## The Twisted Scrambled Eggs

The twist is actually that I decided to go berserk on the ingredients. I kind of went overboard in compensating for the fact that I did not feel like cooking when I did this. There are days when I feel like a *chef* making a masterpiece in the kitchen, but there are instances like this when I just take a peek at the fridge, see what's in there, and throw them all in one dish. 

#### Ingredients

Eggs - 6pcs
Onion - minced
Garlic - minced
Tomato - diced to my heart's content
Vienna sausage - sliced
evaporated milk
Olive oil
Butter
Water
Salt & Pepper
*<sub>Did you know that one basic etiquette in dining is that when someone asks you to pass the salt, you have to pass the pepper too? I think I learned that way back in college, not sure which subject. Maybe one of my professors just lectured us about this.</sub>*

#### Procedure
1. Break eggs into a bowl. Add salt and pepper. Add a little bit of water. Add a little bit of evaporated milk. I usually add fresh milk but evap worked just fine. Scramble. 

2. Heat pan on medium fire. Pour in some olive oil. Sautee garlic and onion. Then add in the tomatoes. 
3. When the ingredients are all limp, *(make sure not to burn the garlic)* add butter. Mix until is fully melted, but don't wait too much as it gets burnt pretty quick. 
4. Add the sliced Vienna sausage. Just mix all the ingredients. 
5. Ditch your spatula. Get your whisker then slowly pour in the scrambled eggs. Whisk the ingredients in the pan gently. Concentrate on the sides, make sure they don't stick. Continue the gentle whisking action until all the eggs are cooked. The milk and the water added earlier will help make your scrambled eggs a little fluffier and will help keep your scrambled from drying up while cooking. 

Serve hot over a bed of steamed rice. I usually enjoy this with a cup of black coffee. Tomato catsup will bring the scrambled egg experience to the next level. 

After I wrote this, I found there really is no twist at all. Just that ill-timed trivia my husband dropped while we were eating. Oh well, I still enjoyed the scrambled eggs.
