Hola mi querida comunidad de Hive, el día de hoy les traigo un delicioso postre que hice hace poco intentando innovar un poco en la cocina, como ustedes sabrán yo sufro de muchas alergias lo que lleva a tener que cocinar bastante saludable a la hora de los postres y bien hay muchas cosas que no puedo comer como chocolates y colorantes, entonces intento hacer postres con frutas que no solamente son deliciosas sino que aportan vitaminas al cuerpo ayudando a que tengan un mejor funcionamiento y así no solamente puedes hacer postres que saben rico sino que además son nutritivos.

Esta vez quise experimentar con un mango que trajo mi mamá que le habían regalado y quise incorporar también la zanahoria como. La zanahoria es una fuente de vitamina perfecta para aquellas personas que sufren de la piel porque contiene vitamina que ayuda a la correcta el correcto funcionamiento de la capa epidérmica y el mango es una gran fuente de vitamina c que ayuda mucho para reforzar el sistema inmune, entonces la combinación de ambos es perfecta para las personas como yo que sufrimos de ictiosis junto con dermatitis y que tenemos un sistema inmune debilitado entonces necesitamos siempre tener los refuerzos.

Está receta es bastante sencilla se hace casi completamente en la licuadora y no requiere gran trabajo, realmente puedes hacerla en una hora máximo hora y media todo dependiendo de la cantidad de mezcla que hagas y cuánto tiempo de horneado te tardes. Yo hice una cantidad bastante pequeña dado que solamente somos mi hija y yo durante toda la semana, sin embargo les dejaré la cantidad para que ustedes puedan hacer aproximadamente un molde de medio kilo. Recuerda que siempre pueden adaptar la receta a sus necesidades buscando por internet simplemente el cambio de medidas de la que yo le estoy dando ya sea para más si quieren hacer más mezcla o para menos si quieren menos, todo depende de la cantidad que ustedes necesitan para compartir esta deliciosa receta con sus amigos y sus familiares.

## Ingredientes

250 gramos de harina
Dos huevos
120 Gr de mantequilla
220 gramos de azúcar
Dos mangos medianos
Una zanahoria mediana
1 cucharadita de vainilla
1 cucharadita de polvo de hornear

## Preparación

Lo primero que haremos como siempre es encender nuestro horno a pre-calentar, luego cortaremos medio mango en cuadrados pequeños y agregaremos 3 cucharadas de azúcar mezclaremos y reservaremos por el momento.

Una vez hecho esto empezaremos hacer nuestra mezcla, el primer paso es cortar el resto del mango y nuestra zanahoria la pelamos y la cortamos en pequeños cubos  y licuamos hasta que se vuelva una pasta.

Una vez que la pasta está lista agregamos los dos huevos y volvemos a batir en la licuadora

Seguidamente agregamos la azúcar y volvemos a mezclar.

Ya por último agregamos la mantequilla, está debe estar a temperatura ambiente y si tienen microondas pueden derretirla un poco, yo no tenía microondas así que simplemente la agregue.

Una vez que tenemos este paso listo llevamos nuestra mezcla a un recipiente limpio y seco, pasamos a incorporar la harina junto con el polvo de hornear y mezclamos hasta obtener una pasta homogénea.

Una vez que tenemos nuestra mezcla lista la vertemos en un molde previamente enmantecado y enharinado o si tiene papel para horno pueden utilizarlo.

Luego de colocar nuestra mezcla, tomamos el mango cortado en cuadros que hicimos al principio y lo vertemos en la parte superior de nuestro pastel.

Llevamos al horno aproximadamente por 30 minutos o hasta que al introducir un cuchillo este salga completamente limpio.

Dejamos enfriar y listo podemos empezar a disfrutar de nuestro delicioso pastel de mango con zanahoria.

# Delicious Mango and Carrot Cake

Hello, my dear Hive community, today I bring you a delicious dessert that I made recently trying to innovate a little in the kitchen, as you may know, I suffer from many allergies which leads to having to cook quite healthy when it comes to desserts and well there are many things I can not eat like chocolates and dyes, then I try to make desserts with fruits that are not only delicious but that provide vitamins to the body helping them to have a better functioning and so not only can you make desserts that taste good but also are nutritious.

This time I wanted to experiment with a mango that my mom brought as a gift and I wanted to incorporate carrots as well. Carrot is a perfect source of vitamin for those people who suffer from skin problems because it contains vitamin that helps the correct functioning of the epidermal layer and mango is a great source of vitamin c that helps a lot to strengthen the immune system, then the combination of both is perfect for people like me who suffer from ichthyosis along with dermatitis and we have a weakened immune system so we always need to have reinforcements.

This recipe is quite simple it is made almost entirely in the blender and does not require a lot of work, you can make it in an hour maximum hour and a half all depending on the amount of mixture you make and how long it takes to bake. I made a fairly small amount since it is just my daughter and me for the whole week, however, I will leave the amount so that you can make about a half kilo mold. Remember that you can always adapt the recipe to your needs by simply searching the internet to change the measurements from the one I am giving you, either for more if you want to make more mixture or for less, if you want less, it all depends on how much you need to share this delicious recipe with your friends and family.

## Ingredients

250 grams of flour
Two eggs
120 grams of butter
220 grams of sugar
Two medium mangoes
One medium carrot
1 teaspoon vanilla
1 teaspoon of baking powder

## Preparation

The first thing we will do as always is to turn on our oven to preheat, then we will cut half a mango into small squares and add 3 tablespoons of sugar, mix and set aside for the moment.

Once this is done we will start making our mixture, the first step is to cut the rest of the mango and our carrot, peel them and cut them into small cubes, and blend them until it becomes a paste.

Once the pasta is ready, add the two eggs and beat them again in the blender.

Then add the sugar and mix again.

Finally, add the butter, it must be at room temperature and if you have a microwave you can melt it a little, I didn't have a microwave so I just added it.

Once we have this step ready, we take our mixture to a clean and dry container, incorporate the flour together with the baking powder and mix until we obtain a homogeneous paste.

Once we have our mixture ready we pour it into a previously buttered and floured mold or if you have a baking paper you can use it.

After placing our mixture we take the mango cut into squares that we made at the beginning and pour it on top of our cake.

Bake in the oven for approximately 30 minutes or until a knife comes out completely clean.

Jajaja menos mal que indicas durante la receta que la harina se añade aparte al final después de mezclar lo otro porque yo al leer licuadora me vi metiendo todo ahí y batiendo sin parar jajajaja

Es una receta apta para los que no cocinamos pero teniendo en cuenta ciertos detalles, el resultado se asemeja al estilo de una torta de auyama lo que suma puntos, mis respetos por tener el valor de inventar recetas nuevas con las cosas que tienes a mano, seguro que la disfrutaste @shaialfonzo 👌🏻
