<div class="text-justify"> Happy Friday and a big hello to all the readers and friends of the Plant Power (Vegan) community. Those who know my blog, know that I grow part of my food, and have seen that one of the crops I have is turmeric (Curcuma longa). This species, although it is not to the taste of my family, I grow it and use it in the kitchen (in small quantities, hahahaha, without them noticing) so I usually use it fresh, just harvested from the ground, however, I saw this week that one of the pots where I plant it, the plant was very deteriorated, for which I presumed was ready for harvest, and so I decided to process it and make <b>TURMERIC POWDER.</b></div>

Quienes conocen mi blog, saben que cultivo parte de mi alimento, y han visto que uno de los cultivos que tengo es la cúrcuma (Curcuma longa). Esta especie, aunque no es del gusto de mi familia, la cultivo y la uso en la cocina (en pocas cantidades, jajajaja, sin que se den cuenta); así que generalmente la utilizo fresca, recién cosechada de la tierra. Sin embargo, vi esta semana que una de las macetas en donde la siembro, la planta estaba muy desmejorada, por lo que presumí que ya estaba lista para la cosecha; y decidí entonces procesarla y hacer <b>CÚRCUMA EN POLVO.</b></div>

<div class="text-justify"> The use of species has always been a constant in my family. Mom always had a wide variety of herbs and spices in the pantry, and when dad cooked, he loved to add lots of oregano, cumin, and pepper to dishes, which shaped my palate and so I like my food very spicy, but not salty.  I remember that as a child, one of the species that I did not like was turmeric powder, because its smell and taste disgusted me. Then, when I grew up, and already living here, my father gave me a small rhizome which I planted, grew, flourished, multiplied, in fact, all the plants that I have been planting over the course of approximately seven years, come from that bit; and it was from there that I discovered my love for turmeric, which is why I continue to grow it, give it away and sell it, but always fresh, never processed, I even use its leaves for soups and to season some grains; however, this time I wanted to experiment with this process.</div>

><div class="text-justify">El uso de especies siempre ha sido una constante en mi familia. Mamá siempre tenía una amplia variedad de hierbas y especias en la alacena, y cuando papá cocinaba, le encantaba adicionar a los platos mucho orégano, comino y pimienta, lo cual formó mi paladar y por tanto me gusta la comida muy especiada, aunque no salada. Recuerdo que de niña, una de las especies que no eran de mi agrado era la cúrcuma el polvo, pues su olor y sabor me repugnaban. Luego, cuando crecí, y ya estando viviendo acá, mi padre me regaló un pequeño rizoma el cual sembré, creció, floreció, se multiplicó, de hecho, todas las plantas que he ido sembrando a lo largo de siete años aproximadamente, provienen de ese pedacito; y fue a partir de allí que descubrí mi amor por la cúrcuma, por lo cual la continúo cultivando, la obsequio y la vendo, pero siempre fresca, nunca procesada, incluso utilizo sus hojas para sopas y aderezar algunos granos; sin embargo en esta oportunidad quise experimentar con este proceso.</div>

# <center> THE RECIPE / LA RECETA</center>

<center><b>Time, ingredients and equipment</b></center>

+ Preparation time: This, more than a recipe, is really a process, which I developed in two days, since I first harvested the turmeric, cleaned it, and then blanched it, peeled it, baked it and ground it, so I did not measure the time, except blanching (5 minutes), and baking that lasted two hours at a minimum temperature.
+ Servings: From 245 grams of fresh turmeric, I got 30 grams of turmeric powder.

+ Turmeric rhizomes, I managed to harvest 245 grams.

+ Enough water to wash it several times in order to remove the dirt.


+ A knife, plate, pot, bowl, drainer, blender or food processor, teaspoon, etc.</div>

<center><b>Tiempo, ingredientes y equipo</b></center>

+ Tiempo de preparación: Esto más que una receta es realmente un proceso,  el cual desarrollé en dos días, ya que primero coseché la cúrcuma, la limpié, para luego blanquearla, pelarla, hornearla y molerla, así que no medí el tiempo, salvo el blanqueado (5 minutos), y el horneado que duró dos horas a temperatura mínima.

+ Raciones: De 245 gramos de cúrcuma fresca, obtuve 30 gramos de polvo de cúrcuma.

+ Rizomas de cúrcuma, yo logré cosechar 245 gramos.

+ Agua suficiente para lavarla varias veces a fin de retirar la tierra.

+ Un cuchillo, plato, olla, bol, escurridor, licuadora o procesador, cucharilla, etc.

<div class="text-justify"> As you can see, here I am extracting the plants from the pochard where they were planted. To my disappointment, the rhizomes were small, young and in small quantity, which I attribute to three factors: I did not have enough soil, there was a trebolera growing in the same container so it deprived the turmeric of nutrients, and I also saw some ants indoors. Well, I still took it out, I gave the slightly dry leaves to the morrocoyes and my neighbor's sheep, I separated some rhizomes that can be reseeded and I took the rest to my kitchen. When I weighed them I only got 245 grams.</div>

><div class="text-justify">Como pueden ver, aquí estoy extrayendo las plantas del porrón en donde estaban sembradas. Para mi decepción, los rizomas eran pequeños, jóvenes y en poca cantidad, lo cual atribuyo a tres factores: No tenía tierra suficiente, estaba una trebolera creciendo en el mismo recipiente por lo que le restaba nutrientes a la cúrcuma,  y ví también algunas hormigas adentro. Bueno, aún así la saqué, le dí las hojas algo secas a los morrocoyes y a los ovejos de mi vecino, aparté algunos rizomas que pueden ser resembrados y llevé el resto a mi cocina. Cuando los pesé sólo obtuve 245 gramos.</div>

<div class="text-justify"> I proceeded to remove the radicles that came out of the rhizomes, in order to leave only the tuber, thus favoring its handling, cleaning and being able to remove the skin more easily later. I washed it in clean water several times, I think five or six times, until it was free of dirt; to later blanch them in boiling water for five minutes. Once this time had elapsed, I strained them and waited for them to cool.</div>

><div class="text-justify">Procedí a retirar las radículas que salían de los rizomas, a fin de dejar sólo el tubérculo, favoreciendo de este modo su manejo, limpieza y poder quitarle la piel con mayor facilidad posteriormente. Lo lavé en agua limpia varias veces, creo que cinco o seis veces, hasta que quedó libre de tierra; para posteriormente blanquearlos en agua hirviendo por cinco minutos. Una vez transcurrido este tiempo, los colé y esperé a que enfriasen. </div>

<div class="text-justify">While the turmeric was cold, I proceeded to peel it, carefully removing the skin and its own little holes. I removed 70 grams of peel, leaving behind 175 grams of turmeric, similar to baby carrots, which I placed on a baking tray, on top of napkins to absorb moisture. I baked for 2 hours at minimum heat (140 ºC), since I don't have a dehydrator.</div>

><div class="text-justify">Estando la cúrcuma fría, procedí a pelarla, retirando con cuidado la piel y los hoyitos propios de ella. Retiré 70 gramos de cáscara, quedándome 175 gramos de cúrcuma, similar a pequeñas zanahorias, las cuales coloqué en una bandeja de horneado, encima de servilletas a fin de absorber la humedad. Horneé por 2 horas a fuego mínimo (140 ºC), ya que carezco de deshidratador.</div>

<div class="text-justify"> While the tray was in the oven, the aroma of turmeric filled my house (what a delight!), however, when I took it out of the oven I was somewhat disappointed, since the appearance of the already dried rhizomes was not very pleasant. , and the smell was different, then I understood why I disliked turmeric powder when I was a child, it was the same smell back then. I weighed this product and was surprised that it weighed only 30 grams. I then proceeded to grind it in the blender. I recommend that you be VERY CAUTIOUS when doing this, since it can damage the engine of the equipment, you have to do it calmly, progressively. In the end there is a fine powder of an intense orange color as you can see in the photos, some people sift it, I did not, then I put it in a glass jar to use it later.</div>

><div class="text-justify">Mientras estuvo la bandeja en el horno, el aroma de la cúrcuma inundó mi casa (¡que delicia!), sin embargo, al sacarla del horno quedé algo decepcionada, ya que el aspecto de los rizomas ya secos no era muy agradable que se diga, y el olor era distinto, entonces comprendí porqué la cúrcuma en polvo me desagradaba cuando era niña, era el mismo olor de ese entonces.  Pesé este producto y me sorprendió que pesara sólo 30 gramos. Procedí entonces a molerla en la licuadora. Les recomiendo sean MUY CAUTOS al hacer esto, ya que pueden dañar el motor del equipo, hay que hacerlo con calma, de forma progresiva. Al final queda un polvo fino de color naranja intenso como pueden ver en las fotos, algunas personas lo tamizan, yo no lo hice, luego lo envasé en un frasco de vidrio para utilizarlo posteriormente.</div>

Te diré que la cúrcuma, utilizada sabiamente, es deliciosa en distintas preparaciones, como por ejemplo, las sopas de verdura, las caraotas blancas y pintadas, para hacer arroz a la jardinera, entre otros.  Consigue los rizomas y los siembras, crecerá y producirá mucho. También la puedes tomar en tés o infusiones. Un gran saludo.

I also grow "Curcuma" in my house, that's what we call it in my region: Barinas - Venezuela.
I have never dehydrated it, I have always used it fresh.
But it's a great idea to have it in powder form.

Sí, la cúrcuma definitivamente es mejor consumirla fresca, quise probar esta técnica, pero no me gustó mucho el resultado, sin embargo es una buena alternativa cuando no podemos sembrarla o está de temporada. Un procedimiento largo pero sencillo. Yo aprendí a usar cúrcuma en el proceso con el cáncer desde allí no la desamparo. Me gusta más natural que en polvo, pero al rallarla me deja las manos amarilla. Ahora la compro en polvo porque sr que la vendía en el mercado ya no está. Me gustó este proceso. Trataré de buscarla otra  vez natural para hacerla polvo. Saludos

Hola @theresa16, gracias por visitar mi post. Había oído que la cúrcuma tiene propiedades medicinales que ayudan a eliminar el cáncer, y tú me lo has comprobado con tu comentario. Es mucho mejor natural, definitivamente, sólo que quise experimentar con esta técnica. Sembrarla es muy sencillo, como ves, la puedes tener en porrones, y aprovechar sus hojas. De todos modos, si consigues de temporada, también es una manera fácil de conservarla. Espero que estés bien. Saludos.
