Today I have returned with another pumpkin or auyama recipe, as we call it in Venezuela, and it currently has a very good price, and so I take advantage of the fact that it is in season, (end of season), to buy and make various recipes. I do not plant it in my plot, because my dogs have a special predilection for its leaves and flowers, so it is useless to plant them, because they eat them.</div>

I made this cake because it is nutritious, simple and very pleasant, especially if accompanied by a good coffee. For children it is very good, because they can eat something sweet that at the same time feeds them.</div>

><div class="text-justify">Ya estoy algo más desocupada que semanas atrás, lo cual me permite hacer algún postre, para poder merendar o comerlo al final de la comida. Hice esta torta porque es nutritiva, sencilla y resulta muy agradable, especialmente si se acompaña de un buen café. Para los niños es muy buena, pues pueden comer algo dulce que a la vez les alimenta.</div>

<div class="text-justify"> This variety of auyama that I bring today is another variety of auyama de palo, (the one I used in the recipe for auyama cream) only this one has a greener skin. If you look closely, on the outside it has a series of grooves and the shell is also very hard; its pulp is firm and of good color. These pumpkins are bought on the street, there are people who plant them in their gardens and bring them to town to sell them. I like them a lot because I know that they do not have agrochemicals, that they are absolutely free of any chemical. </div>

><div class="text-justify">Esta variedad de auyama que traigo hoy, es otra variedad de auyama de palo, (de la que utilicé en la receta de crema de auyama) sólo  que ésta tiene la cáscara más verde. Si observan bien, por el exterior presenta una serie de surcos  y la cáscara también es muy dura; su pulpa es firme y de buen color. Estas calabazas se compran en la calle, hay personas que las siembran en sus huertas y las traen al pueblo para comercializarlas. Me gustan mucho porque sé que no tienen agroquímicos, que son absolutamente libres de cualquier químico.</div>

# <center> THE RECIPE / LA RECETA</center>

<center><b>Time, ingredients and equipment</b></center>

<div class="text-justify">

+ Preparation time: This is a simple recipe, we will require approximately two hours to make it, because time is consumed in cooking the pumpkin and baking the cake.

+ Servings: In this opportunity of 1000 grams of pumpkin, I obtained 4 small cakes, of 70 grams each, and a larger cake of approximately 700 grams. This would give a total of about 10 servings.

<b>The amounts of ingredients that I present below may vary according to the taste and availability of each one of you.</b>

+ 1000 grams pumpkin (I used half of the pumpkin).

+ 200 grams of papelón (piloncillo, cane sugar), grated.

+ 50 ml of neutral vegetable oil (I used soybean oil, you can use the one you have at home)

+ 150 grams of sugar, which cannot be seen even in the ingredients because I added it at the end, to give the mixture more sweetness.

+ 2 chia eggs (6 level tablespoons of chia seeds and 50 ml of hot water).

+ 400 grams of leavening wheat flour.

+ ½ grated nutmeg.

+ 1 tablespoon cinnamon powder.

+ 2 tablespoons toasted sesame seeds.

+ 1 pinch of salt.

+ Oil to smear the molds.

+ Sufficient water for the washing, rinsing and cooking processes.

+ Pot, bowls, strainer, grate, chopping board, knife, plates, blender or processor, baking molds, etc.</div>

<center><b>Tiempo, ingredientes y equipo</b></center>

+ Tiempo de preparación: Esta es una receta sencilla, requeriremos aproximadamente dos horas para hacerla, porque se consume tiempo en la cocción de la calabaza y en el horneado de la torta.

+ Raciones: En esta oportunidad de 1000 gramos de calabaza, obtuve 4 torticas pequeñas, de 70 gramos cada una, y una torta más grande de aproximadamente 700 gramos. Esto daría un total de unas 10 raciones.

<b>Las cantidades de ingredientes que a continuación presento pueden variar de acuerdo al gusto y disponibilidad de cada uno de ustedes.</b>

+ 1000 gramos calabaza (utilicé la mitad de la calabaza).

+ 200 gramos de papelón (piloncillo, azúcar de caña), rallado.

+ 50 ml de aceite vegetal neutro (yo utilicé de soya, puedes usar el que tengas en casa)

+ 150 gramos de azúcar, que no se aprecian ni en los ingredientes porque la adicioné al final, para darle más dulzor a la mezcla.

+ 2 huevos de chía (6 cucharadas rasas de semillas de chía y 50 ml de agua caliente).

+ 400 gramos de harina de trigo leudante.

+ ½ nuez moscada rallada.

+ 1 cucharada de canela en polvo.

+ 2 cucharadas de semillas de ajonjolí tostadas.

+ 1 pizca de sal.

+ Aceite para embadurnar los moldes.

+ Agua suficiente para los procesos de lavado, enjuague y cocción.

+ Olla, boles, colador, rallo, tabla de picar, cuchillo, platos, licuadora o procesador, moldes de hornear, etc.</div>

<div class="text-justify"> We start by preparing the chia eggs, for which we simply add hot water to the chia seeds, stir well and leave to rest for about 15 minutes, while they hydrate and form the eggs.</div>

<div class="text-justify"> The pumpkin is then chopped and the seeds are extracted. With the seeds we can prepare delicious and nutritious things, so it is important to take advantage of this part as well. Then I proceed to peel and cut the pumpkin into small cubes. I gave the bark to Mr. Morrocoy. Here nothing is lost, everything is used.</div>

Con las semillas podemos preparar cosas deliciosas y nutritivas, por eso es importante aprovechar esta parte también. Luego procedo a pelar y trocear en cubos pequeños la calabaza.  La corteza se la dí al Señor Morrocoy. Aquí nada se pierde, todo se utiliza.</div>

<div class="text-justify"> Once the pumpkin is chopped, I add a pinch of salt to accentuate its flavor, and I bring it to high heat, with a little water for 15-20 minutes, until it is very soft. I wait for it to cool down and proceed to blend it with 200 ml of water, until obtaining a uniform and thick mixture, like the one seen in the photo.</div>

><div class="text-justify">Ya estando picada la calabaza, le añado la pizca de sal, para que acentúe su sabor, y la llevo a fuego alto, con poca agua por 15 – 20 minutos, hasta que esté muy blanda. Espero a que se enfríe y procedo a licuarla con 200 ml de agua, hasta obtener una mezcla uniforme y espesa, como la que se aprecia en la foto.</div>

<div class="text-justify"> Next, I pour the mixture into a container and add the rest of the ingredients, starting with the chia eggs, which I add slowly while distributing in the mixture, then the paper, then the spices (nutmeg and cinnamon), the oil, and Lastly, the flour, which I sift over the mixture, avoiding lumps. Almost at the end, I place the sesame seeds inside the strainer so that they are sprinkled with the flour and better distributed in the mixture. After this, when rectifying the flavor, I noticed that it was something simple, so I added the sugar. </div>

><div class="text-justify">A continuación, vacío la mezcla en un recipiente e incorporo los demás ingredientes, comenzando por los huevos de chía, que añado lentamente mientras distribuyo en la mezcla, luego el papelón, después las especias (nuez moscada y canela), el aceite, y de último la harina, que voy tamizando encima de la mezcla, evitando se creen grumos. Ya casi al final, coloco a las  semillas de ajonjolí dentro del colador para que se espolvoreen con la harina y se distribuyan mejor en la mezcla. Luego de esto, al rectificar el sabor, noté que estaba algo simple, así que añadí el azúcar.</div>

<div class="text-justify"> I take the cakes out of the oven and wait for them to cool down to unmold and chop. The texture is dense and compact, as it happens when we use a vegetable as a fundamental part of a cake, for example: banana, carrot. The taste is very good, because the spices are harmoniously combined, not one overlaps the other. Sesame and chia seeds give it a nice crunch when you bite.</div>

><div class="text-justify">Saco las tortas del horno y espero que se enfríen para desmoldar y picar. La textura es densa y compacta, tal como ocurre cuando usamos un vegetal como parte fundamental de una torta, ejemplo: cambur, zanahoria.  El sabor es muy bueno, porque las especias se combinan armoniosamente, ninguna solapa a la otra. Las semillas de ajonjolí y de chía le dan un crunchi agradable al morder.</div>

Esta torta me encanta, siempre que iba de viaje por la zona de Arapuey compraba mucho, allí se da mucho la auyama y era costumbre comprar a los vendedores en plena vía sin bajarse uno del auto, son demasiado buenas , podía comprar casi la bandeja entera y comerla durante el resto del viaje jajaja
