En esta ocasión traigo a ustedes esta rica receta cuyo ingrediente principal es la berenjena un rubro que se adapta a cualquier plato sea como acompañante o principal, tiene mucha versatilidad al momento de preparar comidas y por eso hoy es nuestra estrella principal, además de rellenarla con algunos otros ingredientes luce espectacular al momento de adornar cualquier mesa, el sabor es increíble además de ser completamente vegana y muy saludable, en casa a todos les encanta y cuando compartimos con amigos y familiares quedan encantados con su rico sabor, así que te invito a continuar para que conozcas los ingredientes que lleva y el pasa a paso para su preparación.

**Para ello necesitaremos lo siguiente:**

## **INGREDIENTES:**

•	1 berenjena
•	1 zanahoria
•	2 ajíes
•	1 cebolla
•	Una ramita de cebollín
•	½ cucharadita de sal 
•	½ cucharadita de pimienta
•	½ cucharadita de adobo
•	¼  de taza de Aceite
•	10 gramos de aceitunas 
•	½ taza de arroz

**Vamos a la preparación:**

Lo primero que vamos  a hacer es picar en trozos muy pequeños el ají, la cebolla y la ramita de cebollín, también rallaremos nuestra zanahoria y picaremos en pequeños trozos las aceitunas.

Ahora llevamos nuestros aliños picados a una olla y la colocamos a fuego medio con dos cucharadas de aceite para sofreír, le añadimos sal, cocinamos mientras revolvemos suavemente por espacio de 3 minutos aproximadamente, luego le agregaremos la zanahoria, las aceitunas y el arroz con una taza de agua, removemos un poco y dejamos al fuego hasta que el arroz ablande y el agua se evapore, bajamos del fuego y dejamos reposar, reservar.

Aquí vamos a lavar nuestra berenjena y cortaremos en rebanadas para luego sumergirlas en agua con una cucharadita de sal por espacio de 5 minutos, mientras tomamos nuestro aceite y le agregamos la pimienta y el adobo revolvemos para obtener nuestra mezcla, luego sacamos nuestras berenjenas del agua de sal y le quitamos el exceso de agua para posteriormente colocarla en una bandeja previamente engrasada, allí le untamos el aceite condimentado a cada rebanada por ambos lados para llevar luego al horno a 200 grados centígrados por 10 minutos aproximadamente.

Ahora sacamos nuestras berenjenas del horno y una vez reposadas vamos a colocarle nuestro relleno, para ello con ayuda de una cuchara tomamos un poco de nuestro arroz ya preparado y lo colocamos en una de las rebanadas de berenjena, luego enrollamos completamente, así aremos con el resto de las rebanadas, luego llevamos nuestros rollos a un envase y le colocaremos algunas rodajas de tomate para posteriormente colocarlo en el horno nuevamente a 200 grados por espacio de 5 minutos.

Y es así como lucen nuestras hermosas y ricas rodajas de berenjenas sanas y muy nutritivas, un plato que todos adorarán.

On this occasion I bring to you this rich recipe whose main ingredient is eggplant an item that adapts to any dish either as a side dish or main dish, it has a lot of versatility when preparing meals and that is why today is our main star, besides stuffing it with some other ingredients it looks spectacular when decorating any table, the flavor is incredible besides being completely vegan and very healthy, at home everyone loves it and when we share with friends and family are delighted with its rich flavor, so I invite you to continue to know the ingredients it takes and the step by step for its preparation.

**For this we will need the following:**

## **INGREDIENTS:**

- 1 eggplant
- 1 carrot
- 2 chilies
- 1 onion
- A sprig of chives
- ½ teaspoon salt 
- ½ teaspoon pepper

- ¼ cup of oil
- 10 grams of olives 
- ½ cup rice

**Let's get to the preparation:**

The first thing we are going to do is chop into very small pieces the chili bell pepper, the onion and the sprig of scallion, we will also grate our carrot and chop into small pieces the olives.

Now we take our chopped seasonings to a pot and place it over medium heat with two tablespoons of oil to sauté, add salt, cook while stirring gently for about 3 minutes, then add the carrot, olives and rice with a cup of water, stir a little and leave on fire until the rice softens and the water evaporates, lower the heat and let stand, set aside.

Here we will wash our eggplant and cut into slices and then immerse them in water with a teaspoon of salt for 5 minutes, while we take our oil and add the pepper and marinade stir to get our mixture, then remove our eggplants from the salt water and remove excess water and then place it in a greased tray, there we spread the seasoned oil to each slice on both sides and then take it to the oven at 200 degrees Celsius for about 10 minutes.

Now we take our eggplants out of the oven and once rested we will place our filling, for this with the help of a spoon we take a little of our rice already prepared and place it in one of the slices of eggplant, then roll completely, so aremos with the rest of the slices, then we take our rolls to a container and we will place some slices of tomato and then place it in the oven again at 200 degrees for 5 minutes.
