Hola amigos de Hive y de esta comunidad. Con este post retomo oficialmente mi actividad en Hive.

La razón de mi ausencia se debe a que los últimos meses han sido de constante cambio. En primer lugar, me toco asumir nuevos responsabilidades en mi trabajo y el proceso de adaptación no ha sido tan sencillo, sobretodo en temas de tiempo que le tengo que dedicar. Pero también se debe a que por motivos de salud tuve que comenzar a ejercitarme, elegí la natación, que ha sido el deporte en el que más constante he sido, pero esto implica que debo hacer malabares en la administración de mi tiempo.

Pero como ya vamos logrando una mejor forma de administrar el tiempo, para lo cual debo ser muy rigurosa con los horarios, en especial, el tiempo que paso en la cocina, he podido realizar otras recetas para salir de la rutina y tratar de organizar mejor mis alimentos, así como buscar opciones saludables para hacer meriendas, ya que paso muchas horas al día con hambre que surgió esta receta.

La receta del día de hoy, además de ser divina, es muy nutritiva y saludable, ya que estamos incorporando vegetales a nuestra dieta diaria de una forma un poco mas divertida y menos tradicional como lo sería tal vez una ensalada.

Seguro ya deben estarse preguntando por la receta del día de hoy, así que para no dar mas rodeos, el día de hoy les traigo: *tortillas de espinacas* Estas tortillas les pueden servir tanto para merienda, como para desayuno o cena saludable.

Para hacer 22 o 24 tortillas necesitamos los siguientes ingredientes:
- Espinacas al gusto. Yo utilice aproximadamente como un kilo de espinacas.
- 1 pimenton
- 1 cebolla
- 1 diente de ajo
- 1 ají dulce
- 1 huevo
- 2 cucharadas de polvo de hornear
- 1 cucharada de aceite vegetal
- 1 taza de agua
- 1 cucharada de vinagre
- 1 kilogramo de harina de trigo todo uso

>To make 22 or 24 tortillas we need the following ingredients:
- Spinach to taste. I used about a kilo of spinach.
- 1 bell pepper
- 1 onion
- 1 clove of garlic
- 1 sweet chili bell pepper
- 1 egg
- 2 tablespoons baking powder
- 1 tablespoon vegetable oil
- 1 cup water
- 1 tablespoon vinegar
- 1 kilogram of all-purpose wheat flour

Para preparar esta receta lo primero que haremos será picar en trozos grandes nuestras espinacas, conservaremos el tallo, ya que este tiene una gran cantidad de nutrientes. Colocaremos la espinaca en agua con una o dos cucharadas de vinagre para limpiarla adecuadamente y dejaremos unos minutos remojando.

>To prepare this recipe the first thing we will do is to chop our spinach into large pieces, we will keep the stem, as this has a lot of nutrients. Place the spinach in water with one or two tablespoons of vinegar to clean it properly and let it soak for a few minutes.

Mientras nuestra espinaca esta en remojo, picaremos los vegetales en trozos grandes e iremos calentando un sarten a fuego alto con un poco de aceite para sofreír los vegetales y lograr que suelten mucho más sabor.

>While our spinach is soaking, we will chop the vegetables into large pieces and heat a pan over high heat with a little oil to sauté the vegetables and make them release much more flavor.

Colocamos los vegetales en la sarten y mientras estos se doran, escurrimos nuestras espinacas. Esperamos unos pocos minutos e incorporamos al sarten donde tenemos el pimentón, la cebolla, el ajo y el ají dulce. Es muy importante aclararles que no es necesario que la espinaca se cocine totalmente en este momento, solo saltearemos un poco con los vegetales y retiraremos la sarten del fuego.

>Place the vegetables in the pan and while they are browning, drain the spinach. We wait a few minutes and then add the bell pepper, onion, garlic and sweet bell pepper to the pan. It is very important to clarify that it is not necessary that the spinach is fully cooked at this time, just sauté a little with the vegetables and remove the pan from the heat.

Una vez que tenemos listo el paso anterior, colocaremos todos los vegetales, incluyendo la espinaca, en la licuadora con una taza de agua y licuaremos muy bien. Una vez hayamos hecho esto, pasaremos a llevarlos a una olla para calentar este "jugo verde" y este bien caliente para preparar la masa. No es necesario que hierva, solo que mantenga calor. En esta parte podemos agregar sal y pimienta al gusto.

>Once we have the previous step ready, we will place all the vegetables, including the spinach, in the blender with a cup of water and blend very well. Once we have done this, we will take them to a pot to heat this "green juice" so that it is hot enough to prepare the dough. It is not necessary that it boils, only that it keeps warm. Ya que tenemos lista nuestra parte liquida de la receta, viene mi parte favorita: hacer la masa. Esta parte será un poco pegostosa, por eso te recomiendo que busques un envase grande para hacer la preparación.

A diferencia de las masas tradicionales donde primero se colocan los productos secos y luego los líquidos, aquí lo haremos al revés porque queremos utilizar toda la mezcla de espinacas y la cantidad de harina dependerá muchísimo de la cantidad de espinacas o la humedad del ambiente donde vivas.

>Unlike traditional doughs where you put the dry products first and then the liquids, here we will do it the other way around because we want to use all the spinach mixture and the amount of flour will depend a lot on the amount of spinach or the humidity of the environment where you live.

Dicho esto, colocamos el liquido en un recipiente grande, agregamos el huevo, el polvo para hornear, la cucharada de aceite y de vinagre, luego iremos incorporando la harina poco a poco y nos ayudaremos para mezclar de una paleta de madera, recuerden que la masa estará un poco caliente.

Cuando hayamos agregado la cantidad de harina que necesitemos hasta que la masa este lo suficientemente manejable, dejaremos reposar unos 20 minutos para que sea más fácil estirarla.

>When we have added the amount of flour we need until the dough is sufficiently manageable, let it rest for about 20 minutes to make it easier to stretch.

Pasado el tiempo de reposo de la masa, yo procedí a cortar bolas de masa de aproximadamente 80 a 90 gramos, que me permitió hacer una tortilla de buen tamaño. Pero el peso y el tamaño lo dejo a tu criterio.

Separada mi masa por bolitas, coloque harina en la masa y tome el rodillo para extender de manera circular la masa. Bueno, yo creí que estaban redondas hasta que estuvieron cocidas y vi que no estaban tan estéticas jajajaja.

Por último, pre-calentamos un sarten que no pegue, puede servir un sarten donde realices panquecas, y vas a colocar la masa extendida lo más delgada posible para que se cocine bien. Cocinamos aproximadamente 2 minutos por cada lado.

>Finally, preheat a non-stick frying pan, it can be a pancake pan, and place the dough spread as thinly as possible so that it cooks well. Cook for approximately 2 minutes on each side.

Un comentario super importante de estas tortillas es que 1 tortilla de aproximadamente 90 gramos (cruda) tiene alrededor de 150 calorías, si estas en un plan para perder de peso te recomendaría que comas una sola y la acompañes con queso, jamón, carne o pollo.

>A super important comment about these tortillas is that 1 tortilla of approximately 90 grams (raw) has about 150 calories, if you are on a weight loss plan I would recommend that you eat just one and accompany it with cheese, ham, meat or chicken.

**Consejo extra:** para que la tortilla quede suave como las que venden en el mercado y puedas doblarla fácilmente, coloca un paño limpio sobre el plato donde las colocaras una vez estén listas y tápalas con el paño. La humedad de la tortilla hará que quede fácil de manipular sin que se rompa.

>**Extra tip:** To make the tortilla as soft as the ones sold in the market and to be able to fold it easily, place a clean cloth on the plate where you will place them once they are ready and cover them with the cloth. The moisture in the tortilla will make it easy to handle without breaking.

**Otro consejo extra:** si hiciste muchas más de las que te vas a comer en el momento, guárdalas en una bolsa plástica y llévalas al congelador. Esto hará que permanezcan frescas mucho más tiempo. Cuando quieras comerlas, solo deberás sacarlas del congelador unos 20 minutos antes y estarán como nuevas.

>**Another extra tip:** if you made many more than you are going to eat at the moment, store them in a plastic bag and take them to the freezer. This will keep them fresh much longer. When you want to eat them, just take them out of the freezer about 20 minutes before and they will be as good as new.
