Turning Mushroom Chips to Sisig

Wasting food is not good, we all know that, of course. A few months ago, my mother ordered a box full of mushroom chips in different flavors. The foods are about to get expired next month and there's still a lot left. That's because she ordered another box full of mushroom chips from another store for comparison. Now that it's the last week of January, we want to consume all of it before it expires. One recipe my mother have thought of to consume the chips faster is to turn it into a **Mushroom Chips Sisig.**

**Sisig** is a Filipino dish originating from the province of Pampanga, known as the Culinary Capital of The Philippines. The original sisig dish uses pork's head and chicken liver. The meat is grilled and then chopped into tiny cubes. It is then cooked with lots of onions *(white or red)*, red or green chili, and lime. Then served on a sizzling plate topped with a fresh egg. Don't worry, because the egg gets partly cooked while the food is still sizzling. 

While the usual sisig recipe is pork's head and chicken liver, one can actually use other meat as an alternative. There's tuna sisig, bangus *(milkfish)* sisig, roasted chicken sisig, mushroom and tofu sisig, and a lot more. My personal favorite are the bangus sisig and liempo sisig. Liempo is pork belly. I don't like the texture of the pig's head meat and I don't like chicken liver too, plus, I have a really good imagination. Lol.  

We used to cook Mushroom Sisig last year but the mushroom we used back then were fresh oyster mushrooms. For this time, we are using fried and breaded oyster mushrooms, a.k.a mushroom chips.

The mushroom chips sold here in my country are oyster mushrooms. I'm not sure if there are other kinds of mushrooms turned into chips. I haven't seen one other than oyster mushrooms.

Now let's proceed with the Mushroom Chips Sisig!


*(I can't remember the measurement of each ingredient so I will just share the procedure.)*

### Step 1. Sauté garlic into butter.

<br>

You can use whatever cooking oil as an alternative if you want, We use butter because it tastes better and healthier.

### Step 2. Sauté onion.

<br>

We use white onion because the taste of red onion is too strong for us but red onion is the usual one that is used for this dish. :)

### Step 3. Add the chopped mushroom chips. Mix.

If the mushroom chips is huge, chop them into bite size so they're easier to chew.

### Step 4. Add oyster sauce. Mix.

### Step 5. Add mayonnaise. Mix.

<br>

Add an amount that is just right to coat the meat or mushroom chips.

The original sisig recipe doesn't use mayonnaise nor oyster sauce. We got the idea from our favorite liempo sisig we love to order before the pandemic. It's the kind of sisig we got used to, so when we cook our own, we also add mayonnaise.

### Step 6. Add seasoning mix, then mix. *(Optional)*

I don't know why Filipino moms are so obsessed with seasoning mix for an "extra flavor". I don't even know if these are healthy or just full of whatever chemicals.

### Step 7. Add chopped chili. Mix.

<br>

Green or red, chop it and mix it into the sisig. Add more if you want a more spicy taste.

### Step 8. Squeeze some lime. Mix.

<br>

The amount of lime depends on how much sourness you want the dish to have. Some add it while cooking it, while others don't. Instead, they give you limes when the dish is served and you do the squeezing yourself. I think the latter is better because you can control how much sour you want it to taste. For one serving, they usually give you one or two whole limes.

### Step 9. Add ground pepper. Mix.

<br>

My mother forgot to put ground pepper while cooking it so she just dusted some when it was already on the plate. Lol. Don't forget your ingredients while cooking!

### Step 10. Add egg

<br>

If you have a sizzling plate then you can scoop some sisig and place it on the plate then crack a fresh egg on top. Of course, the sizzling plate should be already hot before you place the food. But in our case, we don't have that so we placed each serving on a hot pan. We're not eating it on a pan, if that's what you're thinking. Haha. 

Melt some butter before scooping a serving of the sisig.

Then crack a fresh egg on top of it.

Wait for the egg to get slightly cooked. The egg needs to be only slightly cooked so you can easily mix it with the sisig.  

Put the sisig on your plate, add rice, and tadah!!!

I'd say this will taste better if the mayonnaise we bought is the better-tasting one. The mayonnaise that was added into our sisig was sweet but still tasted good.

That would be a healthier option. 😃 I haven't tried eating wild mushroom yet.
