heute gibts mal wieder ein Beitrag für den MealMonday! Dieses  Rezept is mal wieder komplett selbst ausgedacht, viel Spass dabei!: Dieser Beitrag soll sich an alle richten die gerne Kochen, gerne Essen (wer tut das nicht 😉) oder/und gerne Rezepte schreiben!

Zukünftig sollen unter dem TAG #dach-MealMonday in der D-A-CH Community kulinarische Spezialitäten aus eurem Haushalt und Leben hier auftauchen. Es wäre toll wenn die Foodies des **D-A-CHs** hier Ihre Wochen(end) Aktionen zum Thema Kochen präsentieren.

Es wird jeder der einen qualitativen Beitrag abliefert von mir einen 100% Upvote bekommen, da meine Upvotes allerdings nicht viel ausmachen, hoffe ich wir bekommen die Unterstützung von einem oder zwei Big Whales die sich für Rezepte und gutes Essen interessieren. 

Ich finde wir haben schon wirklich sehr tolle Tagesaktionen und möchte mich nun hiermit auch ein wenig beteiligen. Da haben wir so tolle Sachen wie den #MittwochsQuickie von @limesoda, den #FilmFriday von @javehimself oder den #FotoFreitag von @rivalzzz um nur ein paar zu nennen.

# Schweinefilet im Wirsingmantel mit Kartoffelpüree, Pilzrahmsauce und Rahmwirsing

Beschreibung: Wie gesagt ist dieses Rezept komplett auf meiner Idee gewachsen, gerade die Farce, fanden wir sehr lecker. Allerdings würde ich das nächste mal Brät vom Leberkäse mit rein machen damit es besser haftet.

500ml | Cream
400ml | Roast stock
1 tablespoon | honey
2 pcs. | Eggs
1 teaspoon | Dijon mustard
some | butter
some | rosemary (fresh)

1 Teelöffel | Dijon Senf
etwas | Butter
etwas | Rossmarin (frisch)

1.) Caramelise the pecan nuts with the honey and peel 4-5 large leaves from the savoy cabbage and set aside. Now wash and clean the savoy cabbage, remove the stalk and cut coarsely. Pour into a pot and fry lightly with the bacon. | 1.) Die Pekanüsse mit dem Honig karamelisieren und vom Wirsing 4-5 grosse Blätter abziehen und beiseite legen. Jetzt den Wirsing waschen, putzen, Strunk entfernen und grob schneiden. In einen Topf geben und mit dem Speck zusammen leicht anbraten.

2.) Add 300ml cream and cook for about 20-30min, season with salt and pepper at the end.   | 2.) 300ml Sahne hinzugeben und gut 20-30min langsam einkochen lassen, am Ende dann mit Salz und Pfeffer abschmecken.

3.) Clean the shallots and mushrooms, quarter 2/3 of the mushrooms and dice the shallots. Sweat both in a large pan, then add the roast stock and fill up with the rest of the cream, reduce slowly and season with salt and pepper. | 3.) Schalotten und Pilze säubern, 2/3 der Pilze vierteln und die Schalotten klein würfeln. Beides in einer grossen Pfanne anschwitzen, dann den Bratenfond dazu geben und mit der restlichen Sahne auffüllen, schön langsam einkochen lassen und mit salz und Pfeffer würzen.

4.) I made the farce from the bread, mustard, pecan nuts, eggs and the rest of the mushrooms, here I made a creamy mass with a crusher. Now blanch the large savoy cabbage leaves and lay them out on a board. Clean the pork filet all around, season with salt and fry in a very hot pan. Spread the farce on the savoy cabbage leaves and place the fillet of pork on top. Now wrap the fillet with the leaves and fix with a thread if necessary. Cook in the preheated oven at approx. 170 degrees until the core temperature of approx. 68 degrees is reached. | 4.) Jetzt die Farce aus dem Brot, Senf, Pekanüssen, Eier und den restlichen Pilzen herstellen, ich habe hier mit einem Zerkleinerer eine cremige Masse hergestellt. Jetzt die grossen Wirsingblätter blanchieren und auf einem Brett auslegen. Das Schweinefilet rund herum säubern, mit Salz würzen und anschließend in einer sehr heißen Pfanne rund herum scharf anbraten. Die Farce auf den Wirsingblättern verteilen und das Schweinefilet drauf plazieren. Jetzt das Filet mit den Blättern umwickeln und gegebenenfalls mit einem Garn fixieren. Im vorgeheizten Backoffen bei ca. 170 Grad garen bis die Kerntemperatur von ca. 68 Grad erreicht ist.

5.) As soon as it is ready, let the pork filet rest for another 5 minutes and serve everything together, as I said it goes well with mashed potatoes. | 5.) Sobald es fertig ist das Schweinefilet noch 5 min ruhen lassen und alles zusammen, wie gesagt es passt noch gut Kartoffelpüree dazu, servieren.

## Mein Tip / My tip
Statt dem Brot würde ich euch empfehlen Leberkäsebrät zu verwenden um es fester und noch schmackhafter zu machen.
