Hi, my vegan friends! Today I have a nice treat for you (and for my family). this recipe I've been mentally working on it all week because I needed something that looks as good as I imagine it would taste, I thought about the combinations, the ingredients I would need, and how to get them. This recipe had so much preparation because I made two of the main ingredients from scratch, you can just buy them, but for me, this was the best option, I've made them before so I'll link the posts of those recipes on the ingredients. I can tell you, today's recipe tastes like a store-bought candy, and you can give it to your non-vegan friends and they will not complain. Let's get into it!

**Chocolate**

|Ingredients|Quantity|

|Cacao *|225gr|
|Flax|2 tbsp|
|Margarine|80gr|

*This cacao was made manually from scratch, you can use store-bought vegan chocolate, in that case, I think you won't need as much margarine or flax. 

Also, instead of margarine, you can use coconut oil or any other fat  that best suits you, it just happened to be what I had
 
**Pumpkin mousse**

|Ingredients|Quantity|
|-|-|
|Pumpkin|240gr|
|Cinnamon|
|Jaimacan pepper||
|Cloves||
|Sugar|50gr|
|Corn starch|30gr|
|Vanilla|1 tbsp|

**Puffed rice**


|Ingredients|Quantity|
|-|-|
|Puffed rice*|100gr|
|Panela|85gr|
|Flax|3 tbsp|

**Extras**

Salt: everything needs a pinch to really develop its flavors, especially the puffed rice layer. 

Roasted sesame seeds: just topping, they add another bit of flavor and texture.

**Chocolate**

|Linaza|2 cda|
|Margarina|80gr|

*Este cacao se hizo manualmente desde cero, pueden usar chocolate vegano comprado en la tienda, en ese caso, creo que no necesitarían tanta margarina ni linaza.
 
Además, en vez de margarina, puedes usar aceite de coco o cualquier otra grasa que más te vaya, justo resultó ser la que tenía.

**Mousse de calabaza**

|Ingredientes|Cantidad|
|-|-|
|Calabaza |240gr|
|Canela||
|Pimienta de jamaica||
|Clavos de olor||
|Azúcar| 50gr|
|Almidón de maíz |30gr|
|Vainilla |1 cucharada|

**Arroz inflado**

|Ingredients|Quantity|

|Arroz inflado*| 100gr|
|Panela| 85gr|
|Linaza |3 cucharadas|

**Extras**

Sal: todo necesita una pizca para desarrollar realmente sus sabores, especialmente la capa de arroz inflado.

Ajonjolí tostado: solo para adornar, agregan otro poco de sabor y textura.

Before starting, put the flax to hydrate in half a cup of water, we are going to use the slimy product, not the seeds. 

This recipe has three layers, I will show you how I did it this time, but my recommendation is: Make two (chocolate and pumpkin) first, and make the puffed rice when you are closer to the time to eat it or make it apart and keep out of the fridge. This dessert tastes awesome when chilled in the fridge, but more than five hours inside of the fridge will damage the crunchiness of the puffed rice. That said, let's begin!

Antes de empezar ponemos la linaza a hidratar en media taza de agua, vamos a utilizar el producto viscoso, no las semillas.

Esta receta tiene tres capas, les mostraré como lo hice esta vez, pero mi recomendación es: Primero hagan dos (chocolate y calabaza), y hagan el arroz inflado cuando estén más cerca del momento de comerlo o hacerlo aparte. y mantener fuera del refrigarador. Este postre tiene un sabor increíble si se enfría en el refrigerador, pero más de cinco horas dentro dañarán la textura crujiente del arroz inflado. Dicho esto, ¡Comencemos!

**Chocolate layer:**

As easy as melting everything in a bain-marie. I grated the chocolate because mine was homemade and it takes too long to melt if I use big pieces and burns easily, so I grated it to get it to melt quickly and don't spend too much time on the heat. I put first the margarine to melt, once is liquid add chocolate, and finally the flax and constantly mix until smooth. If you have more knowledge about chocolate, great! I just know this much, hopefully, it will improve in the future.

For regular store-bought chocolate, I suggest reducing the margarine or fat of choice, this is because I'm only using that much because when settled mine is as hard as a rock since it's only cacao and sugar ground 3 times.

Pour it into your mold, grease it with oil for easier unmolding, and don't make the layer thicker than 1.5 cm, so the final product would be easy to bite. Reserve on the fridge while you make the next layer.

**Capa de chocolate:**

Tan fácil como derretir todo al baño maría. Rallé el chocolate porque el mío es casero y tarda mucho en derretirse si uso trozos grandes y se quema fácilmente, así que lo rallé para que se derrita rápido y no pase mucho tiempo al fuego. Pongo primero la margarina a derretir, una vez liquida agrego el chocolate, y por ultimo la linaza y mezclo constantemente hasta que quede suave. Si tienes más conocimientos sobre el chocolate, ¡Genial! Solo sé esto, con suerte, mejorará en el futuro.

Para el chocolate regular comprado en la tienda, sugiero reducir la margarina o la grasa de elección, esto se debe a que solo estoy usando esa cantidad porque cuando se asienta el mío es tan duro como una roca ya que solo tiene cacao y azúcar molidos 3 veces.

Viértelo en tu molde, engrásalo con aceite para facilitar el desmoldado y no hagas una capa de más de 1,5 cm de grosor, para que el producto final sea fácil de morder. Reserva en la nevera mientras haces la siguiente capa.

**Pumpkin mousse**

Cut the pumpkin into small cubes and boil with just enough water to cover it, and all the spices. Once soft, put it into a blender, without the water, with sugar, vanilla, and a pinch of salt. When all is mixed add the cornstarch to the blender and blend for one minute, until completely smooth. Pour into a pot and cook at medium heat, constantly stirring until the mixture looks clear-ish, you will see the color go from matte to shiny, and the mixture will be Really thick. Take it out of the heat and cold it down without stopping stirring.

Once it's just warm, pour it on top of the chocolate layer, again, not too thick. Poke the chocolate with a fork to help the layers stick together. You can help it smooth out with a wet spoon. Reserve in the fridge.

**Mousse de calabaza**

Cortar la calabaza en cubos pequeños y hervir con agua suficiente para cubrirla, y todas las especias. Una vez suave, póngalo en una licuadora, sin el agua, con azúcar, vainilla y una pizca de sal. Cuando todo esté mezclado, agregue la maicena a la licuadora y mezcle durante un minuto, hasta que esté completamente suave. Vierta en una olla y cocine a fuego medio, revolviendo constantemente hasta que la mezcla se vea clara, verá que el color pasa de mate a brillante y la mezcla será muy espesa. Retirar del fuego y enfriar sin dejar de remover.

Una vez que esté tibio, viértelo sobre la capa de chocolate, nuevamente, no demasiado gruesa. Pincha el chocolate con un tenedor para ayudar a que las capas se peguen. Puedes ayudar a que se suavice con una cuchara mojada. Reserva en la nevera.

**Puffed rice**

Start by melting the panela into 3 tbsp of flax, with a pinch of salt, why the flax you may ask, well, I noticed it has the property to help hydrate without getting things too wet, also it makes caramel get less hard when cooled back. Once the panela is melted add the puffed rice and mix carefully, try not to smash the puffed rice. You will see how the panela and the flax make nice threads, it looks really good. Once it's all mixed, put it on top of the other two layers. Once set you can take everything out of the mold to see your beautiful dessert!

**Arroz inflado**

Comience por derretir la panela en 3 cucharadas de linaza, con una pizca de sal, ¿Por qué la linaza? puede preguntar, bueno, noté que tiene la propiedad de ayudar a hidratar sin mojar demasiado las cosas, también hace que el caramelo se endurezca menos cuando se enfría otra vez. Una vez derretida la panela agregar el arroz inflado y mezclar con cuidado, procurando no aplastar el arroz inflado. Verás como la panela y la linaza hacen bonitos hilos, queda muy bien. Una vez que esté todo mezclado, ponlo encima de las otras dos capas. Una vez cuajado ¡Puedes sacar todo del molde para ver tu hermoso postre!

If I were to make this again (which I will because it's awesome) I would put plastic wrap or baking paper on the bottom of the mold to take it out easily, especially if it´s just a repurposed container and not a chocolate mold. Also, I will shape the rice layer in another container and keep it outside of the fridge, until I discover a way to make it humidity-proofed, probably using way more panela or caramel to cover every piece of rice. 

Other than that, I consider this a huge success! I hope you try it because it is completely worth the effort. Enjoy it!

Si tuviera que volver a hacer esto (lo que haré porque está increíble), pondría una envoltura de plástico o papel de hornear en la parte inferior del molde para sacarlo fácilmente, especialmente si es solo un recipiente reutilizado y no un molde para chocolate. Además, le daría forma a la capa de arroz en otro recipiente y la mantendría fuera del refrigerador, hasta que descubra una manera de hacerla a prueba de humedad, probablemente usando mucha más panela o caramelo para cubrir cada trozo de arroz.

Hazlo jaja, realmente es sencillo de hacer, y no sale costoso. 

Hacer chocolate es bastante trabajo, entretiene, este lo hice junto a mi mamá, turnándonos para moler cuando tocó integrar el azúcar. Los granos vienen de casa de una amiga, los procesé desde que todavía estaban frescas las semillas jaja ha sido un largo camino pero al fin se hicieron postre!

Muchas gracias. Quiero siempre ofrecer lo mejor de mi para esta comunidad. A veces las recetas no lucen tan espectaculares como esta jaja, pero siempre están hechas con mucho cuidado y amor.  
Esta receta es una combinación genial, porque es deliciosa, bonita, económica, ninguno de sus ingredientes es realmente costoso, probablemente solo el chocolate, y además es fácil de hacer. Espero que las personas se animen a prepararla. Que estés muy bien!
