Hello, bees!!! Have you ever had some vegetables left that aren't fresh anymore but too random to make a cooked dish, or you are just not in the mood for being too creative? This is a great way to use all that is about to go bad (never use food that is already bad) and it can be as healthy or junk as you wish.
Mine are super healthy, just vegetables, you can add charcuterie too, I also just sealed and baked most of them, I did fry some because couldn't resist it haha.

>¡¡¡Hola, abejas!!! ¿Alguna vez les han sobrado algunas verduras que ya no están frescas pero que son demasiado aleatorias para hacer un plato cocinado, o simplemente no tienes ganas de ser demasiado creativo? Esta es una forma estupenda de utilizar todo lo que está a punto de estropearse (nunca utilices alimentos que ya esten malos) y puede ser tan sano o chatarra como quieras.
Los míos son súper sanos, sólo verduras, puedes añadir embutidos también, yo sólo sellé y horneé la mayoría de ellos, aunque sí freí algunos, no pude resistirlo jaja.

Ingredients:

Basically, anything that is not fresh anymore, in my case, some vegetables we had still on the fridge when we when to buy more. You can add anything. 
Chop into small pieces or grate the ingredients. Depending on the ingredients it might be possible to blend them, but I don´t recommend this for two reasons: one, it will be too watery and two, you'll lose all the fiber and that's the best part about eating these nuggets, a lot of the nutrients the vegetables still have and fiber. 

Besides that, we'll need some flour, self-rising flour does a good job here, better than all-purpose flour but both will work. 

Oil, a little bit just to seal the croquettes or more if you want to fully fry them. 

Salt, pepper, and other spices. We won't be using eggs.

Ingredientes:

Básicamente, cualquier cosa que ya no esté fresca, en mi caso, algunas verduras que teníamos aún en la nevera cuando cuando hicimos mercado. Puedes añadir cualquier cosa.
Picar en trozos pequeños o rallar los ingredientes. Dependiendo de los ingredientes se puede licuar, pero no lo recomiendo por dos razones: una, quedará demasiado aguado y dos, perderás toda la fibra y eso es lo mejor de comer estos nuggets, muchos de los nutrientes que las verduras aún tienen y la fibra.

Además de eso, necesitaremos un poco de harina, la harina leudante hace un buen trabajo aquí, mejor que la harina todo uso pero ambas funcionarán.

Aceite, un poco sólo para sellar las croquetas o más si quieres freírlas completamente.

Sal, pimienta y otras especias. No usaremos huevos.

We are going to start by cooking the vegetables, since they are not fresh, they won't have a good crunchy texture so we go all the other way, to get them to be soft and well seasoned. Stir fry them, first onions and then the hardest to the softest and finally the one with more volume, in my case, col. 

Once they are all on the pot add the seasoning and about one cup of water, let it cook with a lid on for a few minutes until the hardest ingredient is soft. After that add the flour, mix it and cook constantly stirring until a firm dough is formed, about three minutes.  It'll be a little sticky. Let it cool and refrigerate overnight or for at least four hours. 

Fun story: I was doing it on an electric stove and the power went out as soon as I added the flour, so I wasn't able to cook the dough for the three minutes, it resulted in the dough being a little more sticky than it should.

Vamos a empezar cocinando las verduras, como no estan frescas, no tendrán una buena textura crujiente así que haremos todo lo contrario, para que queden blandas y bien sazonadas. Se saltean, primero la cebolla y luego las más dursa a las más blandas y por último la que tiene más volumen, en mi caso, el repollo.

Una vez que están todos en la olla se añade el condimento y aproximadamente una taza de agua, se deja cocer con la tapa puesta durante unos minutos hasta que el ingrediente más duro esté blando. Luego agrega la harina, mézclala y cocina constantemente revolviendo hasta que se forme una masa firme, unos tres minutos. Estará un poco pegajosa. Deja que se enfríe y refrigera durante toda la noche o al menos durante cuatro horas.

Una anécdota divertida: Lo estaba haciendo en una estufa eléctrica y se cortó la luz justo cuando añadí la harina, así que no pude cocinar la masa durante los tres minutos, lo que hizo que la masa fuera un poco más pegajosa de lo que debería.

My oven has this grill so I used it to save gas, it took me longer than 20 minutes. 20 minutes each side.

Now we can work with our hands or with a spoon, also you can put a little bit of water or oil in your hands to manipulate the dough if it's still sticky. It shouldn't be so sticky anymore. For my main version, just use a little bit of oil in a pan and seal them all, place them in a baking tray, and put them in the oven to finish cooking, about twenty minutes.  You can also just deep fry them and that would be delicious, but I'm trying to eat as healthy as possible so I just fried three little croquettes for the cravings.

Ahora podemos trabajar con las manos o con una cuchara, también podemos mojarnos en agua o usar un poco de aceite para manipular la masa si sigue algo pegajosa;  ya no debe ser tan pegajosa. Para mi versión principal, sólo hay que usar un poco de aceite en una sartén y sellarlas todas, colocarlas en una bandeja de horno y meterlas en el horno para que se terminen de cocinar, unos veinte minutos. También puedes simplemente freírlas y eso sería delicioso, pero yo estoy tratando de comer lo más sano posible así que sólo freí tres croquetas pequeñas para matar el antojo.

Espero que las disfruten y no dejen que se desperdicie nada de su comida.

This is a great recipe. The fact that it requires whatever leftover vegetables you have is amazing. food waste is a big no-no in my house. Food is expensive if you keep on wasting it. Very sustainable idea. Thanks for sharing!
