Iβm making some Halloween style balls for my next event. Trying to play with some recipe ideas. I experimented with these little ghosts hahaa I know they are not that neat but itβs quite hard to work with raw vegan white chocolate and maybe it adds to their ghastliness πππ» I made the insides with using 1 cup of dates ( make sure they are the soft type) 1 cup walnuts, about 5 tablespoons cacao powder ( adjust for personal taste) and after blending I threw in some cacao nibs and have it a quick pulse. Whilst you leave the balls to chill in the fridge make the white chocolate. I blended half a cup of soaked cashews with half a cup of maple syrup, half a teaspoon of fresh vanilla powder, a little essence, a tablespoon of distilled water and blended them added a cup of melted cacao butter. I tried to drop it on from the top so it ran down like a ghost but think I need a bit More practise haha then put on cacao nibs as eyes. One thing that Iβm defo doing next time is setting aside eye pairs so I can actually have them ready before the chocolates sets as itβs pretty quick.
