 说起腊蹄花就要流口水了🤤 刚刚蒸出炉的腊蹄花醇香四溢… 太馋那个腊味香气了～ 一个猪蹄从精挑细选，到买到心仪的那块超大腿肉，还真不是我能做到的 我自己是从没买过猪蹄膀，因为不是很懂怎么挑选，价位也是很贵滴 每年都是吃现成爸妈做的，每年老爸都会搞这个特色菜，也只有冬天才吃到的腊蹄花 我见过我妈晒蹄花的经验方法，她说蹄膀要几场冬至后的太阳多晒晒比较有味道，蹄花便慢慢有了“成熟”的颜值 那样猪皮慢慢才会变黄起来，肉也会变得紧实香香滴… 而且要晒得差不多在腊月间的太阳，会更有腊香味～ 风一吹远远都能闻到… 每次年夜饭上，除了年年有鱼，还有老爸的梅菜扣肉，接下来最主要的菜肴就是腊蹄花～ 晒出腊香味保存好，差不多年三十那天早上很早就要开始用热水清洗干净，然后就是清蒸了 蒸的时间当然是比较长的，具体的时间还得问问我老爸 我还不不清楚呢 我只会吃🤭 只有蒸出来的蹄花才是原汁原味滴，刚蒸好的腊味香气最浓～ 这个时候就要赶紧用刀割🈹成一小块的，这样大家吃起来就直接筷子🥢一夹到碗里了… 而且要趁热吃，不然凉了会生硬。吃在嘴里味道特醇香，口感好劲道，肉肉肥而不腻，瘦不塞牙～ 连着猪皮的腊味最好吃😋😋
