Hoy les traigo la receta de mis hallacas veggie, deliciosas, económicas y fáciles de hacer… cada día se suman más personas al vegetarianismo y para ellos esta opción de hallacas, al ser este plato el protagonista de las comidas navideñas en Venezuela y en cada hogar de un venezolano en el mundo, que no se queden los comensales veggie sin saborear su respectiva hallaca, así que manos a la obra y a celebrar en grande.  Son exquisitas y muy saludables.

**Ingredients for 20 hallacas**:
1 kilo of precooked corn flour
3 carrots
1 large zucchini
2 eggplants
2 onions
100 grams of onoto seeds
2 cups of oil
1 head of garlic
1 sprig of parsley, cilantro, leek garlic, chives and celery Spain
2 tablespoons of capers
Salt, cumin and pepper in c/n
¼ cup of red wine
2 rolls of wick
2 kilos of banana leaves cut into cloths and clean
For the garnish:
1 large red bell pepper chopped lengthwise
2 Onions chopped into rings
200 grams of green olives without seeds
200 grams of raisins

**Ingredientes para 20 hallacas** :
1 kilo de harina de maíz precocida
3 zanahorias
1 calabacín grande
2 berenjenas
2 cebollas
100 gramos de semillas de onoto
2 tazas de aceite 
1 cabeza de ajo
1 ramito de perejil, cilantro, ajo porro, cebollín y apio España
2 Cucharadas de alcaparras
Sal, comino y pimienta en  c/n
¼ taza de vino tinto
2 rollos de pabilo
2 kilos de hojas de plátano cortadas en paños y limpias
Para el adorno:
1 pimentón rojo grande picado a lo largo
2 Cebollas picadas en aros
200 Gramos de aceitunas verdes sin semillas
200 Gramos de uvas pasas

**Process**:
1.- Wash the vegetables very well, chop them and blend them. This smoothie is placed in a pot and boiled along with the capers.
1.- After being 10 minutes the boiling smoothie is already our stew and the diced vegetables are added, in this case the carrot, the zucchini and the aubergines, we put the carrot first because it is harder.
3.- The stew will be cooking for approximately 30 minutes until it reduces and the vegetables soften without turning into a puree. If it is necessary to thicken it, it can be done by adding a little liquid mass and moving very well so that no lumps are formed. At this point the seasoning is rectified with salt and spices.
4.- When you turn off the stew, add the cup of wine.
6.- The decorations are prepared on a tray and the assembly of the hallacas begins, which consists of placing an extra ball in the center of a previously greased banana leaf, on this ball of flattened dough, stew is placed and the decorations, the leaf is closed in the form of a package so that when boiling them the water does not enter them.
7.- The hallacas are tied and boiled for 30 minutes in a deep pot of boiling salted water. Once the cooking time has elapsed, they are removed from the water and drained.
8.- Hallacas can be stored raw in the fridge for up to 3 months. When you are going to cook it, it is important to thaw them before boiling so that the dough does not crack.

**Procedimiento**:
1.- Se lavan muy bien las verduras, se trocean y se licuan. Este licuado se coloca en una olla y se pone a hervir junto con las alcaparras.
1.- Luego de estar 10 minutos el licuado hirviendo ya es nuestro guiso y se le  van agregando los vegetales picados en cuadritos, en este caso la zanahoria, el calabacín y las berenjenas, colocamos primero la zanahoria por ser más dura.
3.- El guiso va a estar cocinándose por 30 minutos aproximadamente hasta que reduzca y los vegetales se ablanden sin que se vuelvan puré. Si es necesario espesarlo se puede hacer, agregándole un poquito de masa liquida y mover muy bien para que no se formen grumos. En este punto se rectifica la sazón con la sal y las especias.
4.- Al apagar el guiso se le añade la tacita de vino. 
6.- En una bandeja se preparan los adornos y se comienza el armado de las hallacas, el cual consiste en colocar una bolita de mas en el centro de una hoja de plátano engrasada previamente, sobre esta bolita de masa aplastada, se coloca guiso y los adornos, se cierra la hoja en forma de paquetico de forma que al hervirlas no les entre el agua.
7.- Las hallacas se amarran y se ponen a hervir por 30 minutos en una olla profunda en agua hirviendo con sal. Transcurrido el tiempo de cocción se sacan del agua y se ponen a escurrir.
8.- Las hallacas pueden guardarse crudas en el frízer hasta por 3 meses. Cuando la vayas a cocinar es importante descongelarlas previamente al hervido para que la masa no se cuartee.

Se ve muy buena, es una opción para las personas que son vegetarianas. Sabe que en el estado Mérida, le agrega a las hallacas garbanzos y son muy buenos. Sería interesante añadir grano a la hallaca. 🤗

Hola @guelmi1958, sabes que mi abuela andina las cocinaba por 3 horas y les añadía garbanzos... Soy fan del garbanzo pero esta vez no se los agregue, preferí comerlos guisados jejeje

Aunque admito que no cambio mis hallacas tradicionales, esta receta me llama mucho la atención, debo probarla si o si, que delicioso se ve el guiso y muy cremoso, debe ser una explosión de sabores, soy fan de esta receta.

Gracias mi bella @jennyzer, siempre he preparado las hallacas tradicionales pero hace 2 años por solicitud de una amiga vegetariana las prepare especialmente para ella, desde entonces las preparo para mi también. No tienen mucha diferencia de las tradicionales en sabor y son mucho más saludable. Un abrazo grande

¡Que bien que se ve esto! Me encantan las versiones vegetarianas de las recetas porque generalmente no tienen nada que envidiarle a las recetas tradicionales. Nunca probé una de estas, supongo que voy a tener que esperar hasta alguna feria de las colectividades en las que alguien las venda jaja. Espero que las hayan disfrutado. ¡Saludos 😃!
